Ingredients
- 2 cups rolled oats
- 2 bananas, mashed
- 2 carrots, grated
- 1 apple, grated
- 1 cup unsweetened applesauce
- ½ cup chopped peanuts
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking dish.
- Mix oats, bananas, carrots, apple, applesauce, and peanuts together in a bowl; spread into the prepared baking dish.
- Bake in the preheated oven until golden brown, about 20 minutes.

The product at the end of the video gives the impression the bars are pretty stiff. I am pretty sure that even after setting up and cooling, mine will remain on the soft side. We’ll see. Maybe I needed to press it more flat in the dish to make it thinner. I liked the idea of such a simple recipe with healthy ingredients. I am surprised at the comments that criticize for bland flavor. What do you expect with apple, banana and carrot with no added sugar or any other spice? I really wanted to try the recipe as-is, but in the end made a few tweaks. I realize that pretty much negates my review of the actual posted recipe. 🙁 I didn’t trust the apple sauce would result in a firm enough bar so I skipped that part. I added about 1/4 tsp cinnamon because it just felt right. I will add more next time because I like more than just a hint of cinnamon. I also added about 1 TBS honey, also because it felt right, as a trade for the apple sauce. I used pecans instead of peanuts because I didn’t have any. 🙁 Even without apple sauce, I had to bake for an extra 20 minutes to get desired “dryness”. I used parchment paper instead of oil/grease, so I flipped it for the last 1o minutes to dry out the bottom. So my bars are a little firm on the outside with what appears to be softer inside. Even with the added honey and cinnamon, the flavor is pretty mild. I like a little more kick in my snacks, but it needs to come from other than sugar, so I’ll give it some more thought.
Made these for a 4th of July party. I found that baking time was not long enough and had to add 8 minutes before fully cooked. When I found this recipe and it said prep time 15 minutes. NOT! No way a person can grate carrots and apples, mash bananas, mix in oats and applesauce, and grease the pan in 15 minutes. Aggravating, but I like the finished product.
I had high hopes… but these turned out to be a pile of mush! I put them back in the oven for another 10 minutes… hoping for a firmer texture. The only way to eat these would be with a spoon! A waste of time/ingredients.
Soft, not crunchy, and no added sugar, healthy! Plus no dairy or eggs is just a bonus. Just what I was looking for. I will add a bit of salt next time.
This is my first time I’m commenting on a post but I had to. Guys, you can TASTE AND TRY what you’re making as you go before you put it all in the oven. No harm done in tasting any of these ingredients raw and you remove guesswork from the process too! No rocket science happens in the oven with these ingredients so you better carefully make half a batch, as if in no way you are able to know how it will be at the end. Yes, it won’t be exactly the same before baking and after, but if you don’t like it beforehand, you simply won’t like it baked either. Just make it so you already like it before baking – if you like it sweeter, add an extra banana or even dates. I like it juicier so I added mashed pears and mango too – I bought mashed organic fruit for babies (1 small jar with carrots, 1 small jar with apple and pears and 1 with mango and banana). I’m soo happy how it tastes before and after baking, the oats were nicely soaked with mashed fruit and it was per-fect. The point is to have a healthy vegan snack with no added sugar, honey, syrup, eggs, artificial flavours, etc., for it to be tasty and this recipe is an amazing foundation for that.
I read the reviews that thought it was too gooey, so I squeezed all the liquid from the grated apples then, as others did, I added cinnamon. I also added a packet of Splenda and about 1/4 cup of chocolate chips. I took them to a football game party and got asked for the recipe. I think it’s better as a breakfast food with tea or coffee than as a party snack.
I should’ve listened to the person who suggested making 1/2 recipe. Took one bite and it’s like thick gelatinous goo. I should’ve stuck with making the banana bread I was originally planning on. I had tried some mini chocolate chips on top and had added a bit of honey, brown sugar and cinnamon but it’s still…too healthy? I don’t know but it’s just not for me.
No one in my family liked these. Really disappointed.
Because some people said theirs turned out mushy with a tendency to not cook all the way, I replaced the apple sauce with an egg and a TBS of oil. That makes it no longer vegan. Because some people said it was bland, I added 1 tsp salt, 1 tsp cinnamon, 2 TBS agave syrup and some chopped dates and low sugar Craisens. It is delicious. I think I will double the cinnamon and add vanilla next time.
They came out mushy and seemed undercooked. I did make some substitutions, but have done these same subs before with success. Instead of applesauce, I used a combination of brown sugar and yogurt. But I dont think I’d make these again.

Mine came out on the super soft side. I cooked it on the middle rack
Made these last night. Left them in the fridge over night. Not bad pretty happy how they turned out. I changed the receipt abit. Used 3 banana’s, 2 cups of oats, half cup of raisins, one carrot and sun flower seeds. Think next time I’ll had some crushed cashew or almond nuts. Overall though it’s a quick, healthy and tasty recipe.
No peanuts, walnuts instead. Didn’t brown, cooked additional 10 mins still didn’t get golden brown. Seemed soft, guess I was expecting crisper.
I added 2 Tb of honey and cinnamon because the mixture was pretty tasteless. I subbed pecans for the peanuts. It came out more moist than I thought but not bad. I enjoyed it in a bowl with vanilla Greek yoghurt.
Very fast and easy. I was looking for something to do with two overripe bananas, had the other ingredients on hand and substituted walnuts for the peanuts.
I was looking for a grab and go breakfast and these are great! I would mention using Very ripe bananas as they will be sweeter. I agree cinnamon would be a good addition. I am going to get creative with ingredients as well.
