Ingredients

  1. 1 ½ cups all-purpose flour
  2. 1 teaspoon baking powder
  3. 1 teaspoon baking soda
  4. ½ teaspoon salt
  5. 3 large bananas, mashed
  6. ¾ cup white sugar
  7. 1 egg
  8. ⅓ cup butter, melted

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin or line cups with paper liners. Sift flour, baking powder, baking soda, and salt together in a bowl; set aside.
  2. Mix bananas, sugar, egg, and melted butter in a separate large bowl until well combined; fold in flour mixture until smooth. Spoon batter into the prepared muffin cups, filling each 2/3 full.
  3. Bake in the preheated oven until tops spring back when lightly pressed, about 25 to 30 minutes. Cool briefly in the tin, then transfer to a wire rack to cool completely.

I changed the flour to a gluten-free blend. I replaced the butter with dairy-free margarine but added just a little bit more. I replaced the egg with applesauce. It turned out so moist and fluffy! My friends and children can’t tell the difference!

Delicious and fluffy has an amazing banana flavor and if u want a bit more flavor and like 1/8 to 1/4 tsp vanilla extract don’t use an electric mixer just makes it dry I added chocolate chips in some or raisens for my mom I hate it when ppl change it and then complain abt it make sure u watch it depending on the size u make

I made a double batch . I added 2 teaspoons of vanilla and cinnamon and a half cup of walnuts. I couldn’t leave them alone. Son & daughter in law said they were very good. I gave them one each lol hey I shared. Only made 23 muffins. Next time I will add a little bit more flour to make 24.

Great recipe! For a simple vegan (and autoimmune friendly) version, try replacing the egg with chia seeds and the butter for a plant-based alternative butter. Just soak 1 tbsp chia seeds in 3 tbsp water and let it sit for 15 minutes- perfect egg alternative for any baking recipe! I put some coconut flakes on top before baking as well for some crunch and loved them

I ran out of baking soda so substituted 2-tbs more of baking powder and cut the salt a bit. Added chopped strawberries and topped with cinnamon sugar. My grandchildren devoured these in minutes. Very quick and easy to make.

Recipe worked great, doubled. I added mini chocolate chips (dairy free) and used dairy free butter. I whisked my eggs before putting into the batter. And made sure to gently fold dry into wet, without mixing too much, just until combined. I accidentally baked them at 375 instead of 350 so I only kept them in for 18 minutes. They were very moist. It made 19 muffins for me.

Simple easy muffin recipe for when you have a few over-ripe bananas. I have used 2 bananas and it turns out fine. Also sub in brown sugar, add walnuts or chocolate chips. My go-to recipe for banana muffins.

Great easy to make. I used Bob Red Mill egg replacer and 1/4 cup Splenda brown sugar. Earth balance used for the 1/3 cup melted butter. 25 min did the trick tops sprung back
