Banana Cherry Custard Muffins

Ingredients

  1. Nonstick cooking spray, for spraying the muffin tin
  2. 3/4 cup frozen pitted cherries, thawed, halved and well drained
  3. 3 very ripe bananas
  4. 1/2 teaspoon vanilla extract
  5. 4 large eggs
  6. Confectioners’ sugar, for dusting, optional

Instructions

  1. Preheat the oven to 375 degrees F. Spray a 12-cup muffin tin with cooking spray.
  2. Line a plate with 2 layers of paper towels and place the cherries on top to dry briefly.
  3. Put the bananas in a large bowl and mash them very thoroughly with a fork. Add the vanilla and mix and mash to combine. Add the eggs and whisk until well beaten.
  4. Divide the cherries evenly among the muffin cups, then pour in the banana custard (each cup will be about three-quarters full). Bake until the muffins are domed and set, 12 to 14 minutes.
  5. Run a thin knife around the edge of each muffin and remove with a small offset spatula. Cool slightly. Dust with powdered sugar if using and serve.

Hi. I made these this morning. I added an extra egg yoke and a slash of milk. I used blueberries with a bit of lemon zest. I added a sprinkle of nut meg and 1/4 tablespoons of cinnamon. After mashing the bananas I mixed everything in my stand mixer on medium for just over a minute.
I think they came out great. I am on a weight loss journey and was looking for something different to make. These worked. I served it with a dollop of 0% vanilla Greek yogurt.

I love this. It is amazing!! I like how it is not super sweet and does not have gluten. Which I can’t have. I made it today for the first time and I ate half of the whole batch. I want to try it with other fruits like raspberries or cranberries for some more variety. So so good!
