Ingredients
- 2 tablespoons olive oil
- 1/4 cup finely chopped onion
- 1 tablespoon garlic
- 1 pound boneless, skinless chicken breasts, sliced into 1/2-inch strips
- 1/4 cup balsamic vinegar
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 3 tablespoons pine nuts
- Salt and pepper
- Mixed greens
- Fresh grated Parmesan cheese
Instructions
- Heat oil in large non-stick skillet and cook onion until tender. Stir in garlic and chicken. Cook chicken until golden brown. Stir in the balsamic vinegar and let simmer for 1 minutes. Stir in honey and Dijon and toss to coat. Add pine nuts and season with salt and pepper. Top mixed greens with chicken mixture and fresh grated Parmesan.

The chicken had a wonderful flavor. I did not have pine nuts at hand, so I didn’t add them. Still good. I’ll definitely add more onions next time. I recommend 1/2 cup of onions.
I have been looking for recipes with low or no salt. This was wonderful. I did not add the salt and he said he would have loved this even if he wasn’t trying to control his salt intake. The onions were wonderful, next time I will add more!
This salad has the best flavor…when I smelled it as it cooked, I thought it would be very vinegary, but it has a very sweet and savory flavor. I used slivered almonds in place of the pine nuts. I highly recommend this recipe!
