Baking Potato Soup

In my opinion, these mozzarella sticks in egg roll wrappers are superior to those at any restaurant.

Prep Time: 20 mins

Yield: 10 servings

Ingredients

  1. 4 large potatoes, peeled and diced
  2. ¼ cup butter
  3. 1 teaspoon salt
  4. ½ teaspoon ground black pepper
  5. 4 ½ cups water, divided
  6. 3 (1 ounce) packages white gravy mix

Instructions

  1. Place potatoes in a pot with water to cover. Bring to a boil, introduce butter, salt and pepper. Reduce heat to medium low and simmer until potatoes are tender, 10 to 20 minutes more.
  2. Meanwhile, prepare gravy mix. Bring 3 1/2 cups of water to a boil in a large saucepan. Combine the remaining cup of water with the gravy mix and stir to dissolve. Stir into boiling water.
  3. Drain potatoes and add to boiling gravy mix. Continue to boil 5 minutes more, adding water to thin if desired. Serve at once.

I added left over chicken, peas, and corn. I put shredded cheese right at serving. It was really good.

Quick and easy potato soup to throw together. What could be easier than starting with a package of white gravy mix? This is a great starter base for fast potato soup. I had leftover baked potatoes that I used in this. I made it as written, but quickly realized I need to add the things I put in my own potato soup – onions, celery and fresh chopped parsley. We really enjoyed this soup and if I have leftover potatoes and want soup I would make it this way again to save some time.

I can honestly say that I cannot justify making soup with a white gravy mix. In all fairness, it isn’t that hard or difficult to throw some flour, milk and butter together to get a good base-start for the soup…. Not only is it funky-tasting (to be polite), but it’s texture is God-awful.

This recipe was pretty good. I used good gravy mix anded a few xtra spices and it was just what she said THICK I wanted thinner so I added a little of the boiled potato juice and the whole family loved it. (boiling the potatoes with some chicken broth is a good thing also).

This soup was horrible! I tried it again by replacing the water with milk and adding onions, celery, and caraway seeds and it was much better. try to avoid the orginal recipie!
