Ingredients
- olive oil, divided, or as needed
- 1 large tomato, cut into 1/2-inch-thick slices
- 1 sprig fresh rosemary, leaves stripped and finely chopped
- 1 clove garlic, minced
- salt and ground black pepper to taste
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Brush baking sheet with about 1 tablespoon olive oil.
- Arrange tomato slices on the baking sheet. Sprinkle rosemary and garlic over tomatoes and brush with remaining olive oil; season with salt and pepper.
- Bake in the preheated oven until tomatoes are tender, 5 to 10 minutes.

Very good, delicious recipe. I added a sprinkle of parmesan cheese and a dash of sugar. We enjoyed it immensely.
So I didn’t have rosemary but I sprinkled some balsamic vinegar and Parmesan cheese on top and baked for 10 minutes and it was yummy!! It would taste amazing on top of bread but I ate it by itself! The picture is before I baked it.
It is a good way to use up tomatoes. The garlic didn’t really cook; I think I would saute it with the olive oil before drizzling on the tomatoes. I will make again.

Good idea for our bumper crop of tomatoes! I did put the tomatoes under the broiler so the cheese melted and got brown on top. I used Italian blend shredded cheese and sprinkled roasted garlic powder on top. Served with chicken breast and fried spaghetti! Very good. Will make again.
Great way to make summer tomatoes. Hubby loved them. Quick and easy and oh so flavorful
I cooked them a wee bit longer, but they are absolutely delicious and a healthy snack.

love this easy recipe. I do add small amount of panko bread crumbs and a sprinkle of grated parmesan cheese. Yummy.
So good and so many uses. I use this to top toasted baguette slices with feta and diced olives for a Greek flare. Makes a good appetizer, or topping for a steak or salad.

All in all, quite unremarkable. Forget the fresh rosemary and use fresh basil instead. Would be improved by a slight dusting with grated Italian cheese.
I used Campari tomatoes that I had on hand. Although these were good, they were on the mushy side. I saw another review that also mentioned that. Broiling was suggested. I will try that the next time, for hopefully, a better result. This will also probably be better with the good, garden-type tomatoes when I get a hold of some. UPDATE 7/30/17: I tried broiling (for 5 min) both a few sliced Roma and Campari tomatoes. The Roma held up much better; the Campari were still mushy.
My husband is the least fussy eater you could find. I made this the other night and he told me I didn’t need to make this again for him. Complained it was too bitter. Maybe my garlic was just too strong because our tomatoes from the garden are extremely sweet.
I love to use this recipe as a side for baked fish. It’s easy and delicious! However, it always takes 10-15 minutes for the tomatoes to bake in my oven.
I place the baked tomato slices on WASA bred und like it more than pasta
I liked it because for once I got a recipe that wasn’t “cheesed” to death (I have a dairy sensitivity, and often recipes depend on the cheese for flavor, so I really have to remake the whole thing which isn’t fun.). My only omission was the garlic because I’m allergic. So instead, I added basil to the Rosemary and a little thyme. It was delicious.

Baked Tomato Slice Haiku: “Easy to prepare, but prefer broil to bake, not bad, just not great.” Made AR’s “Italian Nutthouse Broiled Tomatoes” last week and found those far superior to these, and I can only assume it was b/c it was a broil, rather than bake. These tomatoes, which tasty, were just a little too mooshy for me. I’d be glad to make them again, make cutting the slices even thicker, baking a shorter time, or even broiling. Oh, and only thing I added was a sprinkle of Parmesan.
one of our fav side with a juicy steak. we also like to grill the tomatoes whole in the summer.
