Baked Pesto Chicken Thighs and Potatoes

All you need to make simple chicken and potatoes into a tasty supper is prepared pesto. For a full dinner, serve along with a side salad.

Ingredients

  1. 1 pound mini red potatoes, cut into 1-inch pieces
  2. ¼ cup prepared pesto, divided
  3. 4 boneless, skinless chicken thighs
  4. salt and ground black pepper to taste

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Mix potatoes with 1/2 of the pesto in a bowl. Transfer potatoes to an 11×13-inch baking dish.
  3. Place chicken thighs the same bowl. Unfold chicken and rub remaining pesto all over. Fold thighs back up into original shape and place into the baking dish next to potatoes.
  4. Bake in the preheated oven, stirring potatoes occasionally, until potatoes are soft when pieced with a fork and chicken is no longer pink in the center and the juices run clear, 28 to 30 minutes. An instant-read thermometer inserted into the chicken should read at least 165 degrees F (74 degrees C).
  5. Season with salt and pepper before serving.
  6. If you like extra-soft potatoes, microwave cubed potatoes for 3 minutes before tossing with pesto in Step 2.

Amazing flavor and so easy to prepare. I baked it for 40 minutes stirring the potatoes every 10 minutes. I also did microwave the potatoes for a minute before tossing in the pesto. I will be making this a lot from now on.

We really enjoyed it. It was one note as mentioned in reviews. But we love the Vegan Kale, Basil Pesto from Trader Joes. I did 4 chicken quarters. which I divided. and had red, and yukon gold potatoes. so we could have 6 servings. so used 6 T. of pesto since more chicken and 1 1/2 # potatoes.

I think this would be good for just the potatoes or just the chicken. Having both in the pesto was pesto overload! If I make this again, it will be for one or the other, so I can taste something besides pesto. Otherwise very easy to make.

Pesto always makes everything taste better, and this is no exception. If I were to make this again, I would chop the potatoes smaller, as I prefer the carmelized outside to the plain cooked insides. Overall, a good dish. You can’t go too wrong with pesto, everybody would eat this.
