Ingredients
- 3 tablespoons uncooked macaroni pasta
- 1 tablespoon butter
- ½ cup milk
- 1 tablespoon all-purpose flour
- ¼ teaspoon salt
- ⅛ teaspoon onion powder
- 1 pinch pepper
- ⅓ cup shredded Cheddar cheese
- ⅛ teaspoon ground mustard
- 1 dash Worcestershire sauce
- 1 dash hot sauce
- 1 teaspoon bread crumbs
- 1 tablespoon shredded Cheddar cheese
Instructions
- Preheat the oven to 400 degrees F (200 degrees C). Grease an oven-proof soup crock or 1-cup baking dish.
- Bring a small pot of lightly salted water to a boil. Cook macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain and set aside.
- Melt butter in the same pot over medium-high heat. Whisk in milk, flour, salt, onion powder, and pepper until smooth. Cook and stir for 2 minutes. Reduce the heat to low, then whisk in 1/3 cup Cheddar, mustard, Worcestershire sauce, and hot sauce.
- Stir in cooked macaroni until coated, then transfer to the prepared dish. Sprinkle with bread crumbs and 1 tablespoon Cheddar.
- Bake, uncovered, in the preheated oven until macaroni is heated through and cheese is melted, about 10 minutes.

Love that this recipe is for one. Most mac and cheese I find are bland, but not this one. This one is tasty and saucy. Love it!
I’ve made this before and it was fabulous so I made it again. Forgot to put in the worcestershire sauce and onion powder. Oops. It does make a difference. I dunno how to measure out 3 tablespoons of uncooked macaroni. Besides, it doesn’t seem like enough. I used just about 1/2 cup but I also made 1.5 times the sauce. It fit perfectly in my mini casserole dish that’s about 5 inches wide. I’m glad I can make just enough for me because my son doesn’t eat cheese. It’s all mine mine mine!
LOVE this recipe! Made exactly as stated, but doubled for 2 of us, but still baked in individual crocks. My one minor change was to melt a couple of tbsps of butter and mix it with breadcrumbs, sprinkle on top of the mac and then sprinkle the additional cheddar on top. Fabulous! Really good recipe. I doubled it as I had a crowd that included hungry young men, lol. I used Gouda, sharp cheddar, Monterey jack and Velveeta. Also added some ground mustard with the salt and pepper. Everyone loved this dish! Denver concrete company
Since I was cooking for two I doubled the recipe but was disappointed. There seemed to be way to much sauce for the amount of pasta and the sauce, as much as there was, did not seem cheesy enough. Felt like we were having a little pasta with our sauce.
Didn’t alter anything. I’ll cut the salt a bit next time. I baked it in a toaster oven at 400° for 25 minutes. It came out golden brown! It’s a good base for adding something like bacon bits, broccoli bits, chives, etc.
It took me about an hour to make this which was quite a long time. Also warning don’t add the mustard and Worcester sauce if you don’t absolutely love those flavors. I was skeptical to put them in and then just decided to follow the recipe and did not like it. I also doubled the recipe and it turned out fine cooking wise. Also add a liberal amount of cheese and breadcrumbs to the top, I didn’t add a ton and the crispy top didn’t have much.
Am I the only one that thought the ratios were off? Too much cheese sauce and not enough noodles. Next time I’ll double the noodles. It didn’t taste bad though.
Tripled the recipe so I could have it as a side dish at dinner. So easy to make and I had all the ingredients (save the hot sauce – not a big fan anyway) in the cupboard. Instead of the hot sauce, I added 1/4 tsp of chili powder – added a bit of a kick – and topped it off with 1/3 cup of mozzarella cheese, just to be a bit different. My kids and I loved it – just to note: my children don’t like mac and cheese but they ate this recipe up without complaint.

To match with the amount of sauce, I generally make twice as much past as it calls for or more, but the flavour of this recipe is SERIOUSLY amazing
I have to cook for a child that has allergy to gluten! Now I can just make them their own personal serving and the rest can have regular! I just tried this and thought it was great! I went a scant 1 tablespoon on GF flour after hearing a few reviews about being too thick, because it was for a child I used cheese I knew they would like and I also did not add the hot sauce but subbed some paprika instead. I loved the taste of it. I believe with mac and cheese you need to consider what kind of cheese the person you’re cooking for likes.
Easy breezy.Also, very rare to find recipes for 1. Sure you can scale down appropriately, but it is never as good as the intended portion size; espcially if you’re scaling it own from 6 servings to 2.

Amazing recipe but I made a few changes. Defiantly 4-5 tablespoons of elbow macaroni. Any less, and it turns into macaroni soup. I also added bacon bits, cause every things better with bacon! And I didn’t bake it at all, just added the pasta and enjoyed. I will defiantly make this again.
I added chicken steamed with tandoori, then increased the chilli powder to add a bit of a kick for cold days! It’s a keeper.
It came out perfect! I doubled it and used shells instead. Delicious!!! Already recommended it to other people.
This was very satisfying and rich. I left out the hot sauce and added a few cooked buffalo chicken strips, cut into bite sized pieces. Filled my soup crock and I could not finish it.
