Baked Lemon Meringue Pie

Ingredients

  1. 1 (4-ounce) package cook and serve lemon pudding mix
  2. 3/4 cup superfine sugar
  3. 3 cups whole milk
  4. 1 lemon, juiced
  5. 3 egg yolks
  6. 1 baked pie crust (in a 9-inch deep pie plate)
  7. Lemon Whipped Cream, recipe follows
  8. 2 cups heavy cream
  9. 1 lemon, zested and juiced
  10. 1 cup powdered sugar
  11. Candied lemon peel, garnish

Instructions

  1. In a medium saucepan, mix together the pudding mix and sugar. Slowly whisk in the milk and lemon juice until smooth. Beat the egg yolks in a small bowl and add them to the pan. Whisk until incorporated. Bring the mixture to a boil over medium-high heat, stirring constantly with a rubber spatula until thickened. Allow to cool in an ice bath. Pour the filling into the pie crust and refrigerate until set, about 1 hour. Cut into wedges and serve with Lemon Whipped Cream.;
  2. In a chilled mixing bowl add the heavy cream, lemon zest, lemon juice and powdered sugar. Using a handheld mixer, beat until soft peaks form. Transfer to a serving bowl and garnish with candied lemon peel. Refrigerate until ready to serve.

It’s not lemon meringue pie… its lemon pudding pie with a whipped cream topping. If the topping isn’t made from beaten egg whites its not meringue – not by any creative stretch of the imagination

So where’s the meringue? This is lemon cream pie. For those of you who used the wrong pudding….read the recipe…..you have to cook it. You don’t have to cook instant pudding. But you are right, the recipe should specify which type pudding.
The pie is good, but it’s not a lemon meringue pie.

I’m sorry I didn’t read the reviews first so I would have known which type pudding mix to use. It definitely should have been specified in the recipe. I may try it again using the cook and serve pudding. Just feel bad about the waste. I did like the whipped cream.

Yumm!! I am not sure what happened to the folks who had issues with this recipe, but for us, the pie turned out perfect and tasted incredible! It was sweet, with just the right amount of lemon flavor. The topping was to die for! My husband can normally take or leave whipped toppings, but he couldn’t believe it when he tried it. Said it’s the best ever! Love your recipes AAron!

I read the comments, so I knew to use cook and serve pudding mix and I used Jello. My Husband loved the taste and so did I, It was delicious. I added lemon juice to the eggs, as was shown in the video. My Husband likes lemon, so I used 2 more lemons than was specified. I like trying new things and learning from the experts. I’ll warn you, it is very rich tasting.

The pie never set, runny, too sweet. No mention of how to bake. I do not recommend this to recipe to anyone. There’s gotta be a better way.
