Ingredients
- 3/4 cup plain nonfat Greek yogurt
- 1/4 cup crumbled blue cheese
- 2 tablespoons mayonnaise
- 1 small clove garlic, chopped
- 1 tablespoon skim milk or buttermilk
- Juice of 1/2 lemon
- Kosher salt and freshly ground pepper
- Cooking spray, for the baking sheet
- 3 pounds chicken wings, split at the joints, tips removed
- 4 stalks celery, cut into thirds
- 4 carrots, cut in half
- 2 bay leaves
- 1 cup fat-free low-sodium chicken broth
- 1 cup Frank’s RedHot sauce (or 1/2 cup other hot sauce)
- 2 tablespoons paprika
- 2 tablespoons unsalted butter
- 1 tablespoon honey
Instructions
- Make the dip: Pulse the yogurt, blue cheese, mayonnaise, garlic, milk and lemon juice in a food processor until combined but still chunky. Season with salt and pepper. Cover and refrigerate until ready to serve.
- Make the wings: Preheat the oven to 425 degrees F. Coat a rimmed baking sheet with cooking spray. Put the chicken wings in a deep skillet; add 3 pieces of celery, 3 pieces of carrot, the bay leaves, chicken broth, hot sauce, paprika, butter, honey and 1/2 cup water and bring to a simmer over medium heat. Simmer until the chicken is almost cooked through, about 18 minutes. Transfer the wings to the prepared baking sheet and arrange in a single layer; reserve the sauce in the skillet.
- Bake the wings, turning once, until the skin is golden and crisp, 30 to 35 minutes. Meanwhile, simmer the reserved sauce over medium-low heat until slightly thickened, about 15 minutes. Discard the celery, carrot and bay leaves. Reserve one-quarter of the sauce for serving. Return the wings to the skillet and toss with the remaining sauce. Serve the wings with the blue cheese dip and reserved sauce; cut the remaining celery and carrot into sticks to serve on the side.

So easy and delish! I did add a slurry to the sauce at the end because it didn’t thicken the way I expected. That could have been because my chicken wings were frozen when I started. Either way my son and I loved them!
I really like this healthy version, so far this is the best recipe for healthy hotwings.
Thanks! I was looking for an alternative to deep frying. I loved the blue cheese dip as well. I’ll make it again and share with Family and friends.
Great recipe! Thanks! I pureed the carrots and celery into the sauce.
Made these for the Super Bowl and they turned out amazing! The sauce really tightened up and was good and sticky. Added some minced garlic as well which was a welcome kicked up version. Making them again tonight.
I love both the dip and wings. Followed the recipe as is and have continued making it. Simmering the wings in the sauce makes them so tender.
I didn’t make the dip, but the wings, made exactly as the recipe says, timing the skillet time and oven time with the turn produces the perfect, slightly acidic sauce… that has just the right heat. They are not “burn your face off” hot. Frank’s and the butter and honey produce a sauce with “heat” but no burn. The more you eat, the smoother that gets. I altered the recipe slightly the first time and I was wrong. Do it as written and they are authentic.
I have made these for the super bowl for YEARS! When I ask the kids (now adults and out of the house) what they want for the big game food spread—they ALWAYS request them.—and then add, “ and whatever you want to make, Mom”. I make them exactly as written (unusual for me—I love to experiment)
Making our 2nd batch tomorrow for the Super Bowl. Great flavor, not too much heat. Even the pickiest eater will love!
This was a hit. Loved it and loved the low fat bluecheese. I followed the recipe perfectly and they were perfect. I have to laugh at the reviewer who not only did not follow the recipe but made additions that were not necessary. Then, he had the nerve to give it two stars. If you are going to review at least follow the recipe and not make up your own!!
