Baja Shrimp Tacos

Fresh noodles are the greatest choice for this pork cannelloni. You can replace it with one pound of cannelloni pasta cooked per the instructions on the package, then carry out the instructions.

Ingredients

  1. 1 cup Mexican beer (such as Corona®)
  2. 1 cup all-purpose flour
  3. salt and ground black pepper to taste
  4. ½ cup mayonnaise
  5. 2 tablespoons chile-garlic sauce (such as Sriracha®)
  6. 1 tablespoon mirin (Japanese sweet wine)
  7. ½ cup canola oil, or as needed
  8. ½ pound uncooked medium shrimp, peeled and deveined
  9. 12 (8 inch) flour tortillas
  10. ½ medium head red cabbage, cut into small strips
  11. ½ bunch cilantro, chopped
  12. 3 limes, cut into wedges

Instructions

  1. To make the batter: Mix beer, flour, salt, and ground black pepper in a bowl until well combined. Let batter sit at room temperature for 1 hour.
  2. To make the Baja sauce: Stir mayonnaise, chile-garlic sauce, and mirin together in a bowl. Cover and refrigerate until use.
  3. Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  4. Dip shrimp in prepared batter; fry in the hot oil until golden brown, about 2 1/2 minutes. Transfer shrimp with a slotted spoon to a paper towel-lined plate.
  5. Heat tortillas 1 at a time on a skillet over medium heat until warm to the touch, about 1 minute.
  6. Fill each tortilla with an even amount of shrimp, Baja sauce, red cabbage, and cilantro. Garnish with lime wedges.

This is awesome! Used one pound of shrimp. Added avocado to tacos, used green angel hair cabbage. The sauce is great! Will make this often.
