You can top these bagel egg boats whatever you wish and they make a quick breakfast to take with you.

Ingredients

  1. 1 bagel
  2. 2 large eggs
  3. 1 tablespoon milk
  4. ⅛ teaspoon salt
  5. ⅛ teaspoon ground black pepper
  6. 2 tablespoons crumbled cooked bacon
  7. 2 tablespoons shredded Cheddar cheese
  8. 2 teaspoons chopped fresh chives

Instructions

  1. Preheat a toaster oven to the bagel setting or an oven to 350 degrees F (175 degrees C). Line a small pan with foil.
  2. Split bagel and scoop out the soft interior of each half with a spoon. (Discard excess or reserve for another use.) Whisk together eggs, milk, salt, and pepper in a small bowl. Stir in bacon. Add cheese, followed by half the egg mixture, to each hollowed-out bagel half. Transfer to the prepared pan.
  3. Toast bagel until eggs are set, about 10 minutes. Sprinkle with chives and serve.
  4. No toaster oven? Toast hollowed bagel halves in a toaster. Fill with cheese and egg mixture as directed. Transfer to a microwave-safe plate and microwave on high until eggs are set, about 1 minute. Add desired chopped herbs and sauce (if using).
  5. You can substitute any 2 tablespoons vegetables or cooked meats for the bacon, any 2 tablespoons cheese, any 2 teaspoons herbs, and add 2 teaspoons any sauce you prefer.
  6. Harissa Feta Bagel Egg Boats: chopped yellow bell pepper, crumbled feta, chopped fresh parsley, and harissa sauce.
  7. Salsa Verde Bagel Egg Boats: diced fresh tomatoes, shredded Monterey Jack cheese, chopped fresh cilantro, and salsa verde.
