Bacon-Wrapped Turkey Meatballs

These bacon-wrapped packages of goodness come with a sweet teriyaki sauce and are ideal for tailgating or hosting homegate parties on game days. Serve with extra teriyaki sauce on the side for dipping.

Ingredients

  1. cooking spray
  2. 1 pound ground turkey
  3. ½ cup bread crumbs
  4. 1 large egg
  5. ¼ cup finely chopped onion
  6. 2 cloves garlic, minced
  7. ¼ teaspoon salt
  8. ¼ teaspoon ground black pepper
  9. 8 slices bacon, cut in half
  10. 16 toothpicks
  11. ½ cup teriyaki sauce, or more to taste

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and spray with nonstick cooking spray.
  2. Combine ground turkey, bread crumbs, egg, onion, garlic, salt, and pepper until well mixed. Form into sixteen 1 1/2-inch balls.
  3. Wrap each meatball with a piece of bacon, securing with a toothpick. Brush each bacon-wrapped meatball with teriyaki sauce, then place seam side down on the prepared baking sheet.
  4. Bake in the preheated oven for 15 minutes. Brush meatball with additional teriyaki sauce. Continue baking until the turkey is cooked completely and the bacon has reached your desired crispness, 15 to 20 minutes more.

Very good, doubled recipe and ran out of bacon with 1 pack of thick sliced.

I used a bit more seasoned breadcrumbs. Only other things were I made my own teriyaki sauce, served with a Jasmine rice pilaf, and rendered the bacon a bit , cooled and drained on paper towels and then wrapped the meatballs. Did them at 375* for about a half hour brushed them with teriyaki half way through cooking time.
