Ingredients
- 12 jumbo shrimp, deveined
- 1/4 fresh pineapple cut into bite sized chunks or one 14-ounce can pineapple chunks in natural juice, drained
- 6 slices center-cut bacon, cut in 1/2 crosswise
Instructions
- Heat a nonstick skillet over medium-high heat. Holding a shrimp, nest a chunk of pineapple in the natural curve of the shrimp then wrap bacon around the shrimp and pineapple and secure with a wooden toothpick. Wrap and secure all 12 shrimp then add to the hot pan and cook 3 minutes on each side or until bacon is crisp and shrimp are opaque and firm.

A quick and tasty bite! In the video, Rachael says to put the seam side of the bacon down in the pan and it will self-seal, eliminating the need for toothpicks, which is enticing. It didn’t work all that well for me—maybe my bacon was too thick?—but half my little jewels came apart and didn’t make for a pretty presentation. Be sure your bacon is thin, or better yet, follow the actual recipe and skewer those little buggers! But the combination of the salty bacon, the shrimp and the sweet pineapple was DELISH!
I do not recommend. The packets fell apart when cooking. Shrimp was cooked but not the pineapple. And, perhaps a bit too much to cook bacon in oil!? If I were to do this again, I’d make on skewers and oven or grill cook.

On a charcoal grill. Amazing.
Loved the combination of flavors but the process was not for me. They fell apart and if they did stay together the shrimp overcooked by the time the bacon was crispy. Rachel, please use these flavors together in a more realistic cooking process. PLEASE!
Followed this recipe exactly (spearing the wrapped shrimp on the horizontal to facilitate cooking) it was okay, not great. The bacon was so much stronger than the shrimp they disappeared. I will bake these on a rack at 375 next time, and add a dash or two of OLD BAY to the shrimp.
I love shrimp, pineapple and bacon so I think the combination of all three cooked together is perfect !!!
Very good. Easy. BUT…. securing the bacon onto the shrimp with a toothpick and then trying to cook it evenly on both sides is impossible. When you wrap the pineapple and shrimp with the bacon slice, overlap the bacon on one of the wider sides, and cook that side first, which will seal both layers of bacon, making it easier to flip and cook the other side without it opening and falling apart. THEN when it’s ready to come out of the pan, spear it with the toothpick and place right onto the platter you’re serving it in.
BTW, (unless you like raw bacon)I found I had to cook each one for at least 5 minutes on each side, as the bacon takes a lot longer to cook than the shrimp.
