Bacon-Wrapped Halibut

This recipe is comparable to the hot wings served at a well-known restaurant chain. Our less-fattening version uses no frying and less butter!

Ingredients

  1. 18 slices bacon, cut in half
  2. 1 ½ pounds halibut steaks, cubed
  3. ground black pepper, to taste
  4. toothpicks

Instructions

  1. Cook bacon in a large skillet over medium-high heat until just beginning to brown, but still soft. Set aside until cooled enough to handle.
  2. Preheat your oven’s broiler. Season halibut with pepper. Wrap one piece of bacon around each cube of fish and secure with a toothpick. Place on a baking sheet.
  3. Broil for about 5 minutes, turning once, until fish is cooked through and bacon is crisp. Transfer to a platter, and serve warm.

It was good and very easy to make. My halibut got a bit overcooked, but the recipe was good. I would try to make it again. I also basted them in teriyaki sauce and used the pre-cooked bacon sold at the grocery store.

These were very tasty – BUT use very thin bacon – the fish cooks before the bacon is done. I did partially cook my bacon – maybe I should have cooked it a bit longer. I did some in the oven broiler and some on the grill – either way I ended up pulling them out before the bacon was really crisp – but the fish was done. This is solid recipe – well worth making again. Next time I would make sure to have really thin bacon and I would season the fish with some smoked paprika. Thanks for a great summer recipe.
