This dish is rich and filling and ideal for cooler days. Green beans can be swapped out for broccoli or asparagus.

Ingredients

  1. 1 pound pitted dates
  2. 4 ounces blue cheese
  3. 1 pound sliced bacon, cut in half

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Slice dates in half and open them up. Pinch off pieces of blue cheese and place them into the center of dates. Press date halves together to close. Wrap each date with a half-slice of bacon and secure with a toothpick. Arrange in a baking dish or on a baking sheet with sides to catch any grease.
  3. Bake in the preheated oven until bacon is crisp, 30 to 40 minutes. Turn dates over after the first 20 minutes for even cooking.

Easy Peasy and so good. These cook fine without a toothpick to hold the bacon as it will shrink up on it’s own if you stretch the bacon before rolling. I drizzle with Balsamic glaze before serving, very tasty addition for the full spectrum of flavors.

Sometime I use blue cheese and sometimes use goat cheese. Both are delicious. The goat cheese gives a milder flavor that more people seem to enjoy.

I modified this by cutting the bleu cheese with cream cheese and I added 1/2 of a pecan cut length wise. Then after wrapping in bacon, I rolled them in brown sugar. They came out delicious and the reheated well in the air fryer.

Stuffed the dates as full as possible with the Blue Cheese, After they baked, you could not even taste the Blue Cheese, they were good anyway.

I love dates! Lots of people, however, have never tried dates or only had them in a dried/diced form. I had trouble getting people to try them, if it wasn’t for the bacon I think more folks would have turned done having one. They were a hit though!

I agree with some that you should pre-cook the bacon to about 2/3 done. It helps avoid overcooking the dates and cheese. Try baking the bacon (400 for 10 min) as it keeps it flat and easy to roll – then maybe another 10-12 mins at 375 after assembling… I like using Gorgonzola

These went over very well at a dinner party we attended. They did take longer to bake than the 30-40 minutes to get the bacon browned. I also made another batch with parmesan cheese stuffed with prosciutto. They were just as good!
