Bacon Water Chestnut Rolls

Ingredients

  1. 1 (8 ounce) can water chestnuts, halved
  2. ½ pound sliced bacon, cut in half
  3. ¼ cup mayonnaise
  4. ½ cup packed light brown sugar
  5. ¼ cup tomato-based chili sauce

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Wrap each water chestnut with a piece of bacon. Place the rolls seam-side down in a baking dish.
  3. Bake in the preheated oven for 30 minutes, or until bacon is crisp and cooked through. Drain off the grease. In a small bowl, stir together the mayonnaise, brown sugar and chili sauce; pour over the bacon-chestnut rolls. Return to the oven and bake for another 30 minutes.

I’ve made this several times. Always a hit. Always the first thing gone. Always tons of compliments. And always people asking for the recipe. I rate this recipe 5* as it is written, but I normally do not halve the chestnuts. It’s easier to work with the whole piece and adds a better texture.

I baked for 15-20 minutes and then turned each one over for crispier bacon. After baking I used toothpicks in each one to hold together and serve.

I use 2 cans of whole water chestnuts, cut the bacon in half, roll and secure with a damp toothpick (also makes it simple to eat for guests). I bake them on a broiling pan first, to get rid of excess grease. I double the sauce ingredients to have lots to pour over (especially when cutting the bacon in half, you can get a lot more while keeping the cost down). I also heat the sauce in a pot on the stove before I pour it over to bake.

These turned out pretty good and they were simple to prepare. I actually wrapped them a few hours earlier and put it in the fridge. I followed a few other tips and used 2 whole cans of the water chestnuts and cut the bacon in half. I cooked them for 30 minutes, flipped them and cooked for another 20, then covered them with sauce and cooked for an additional 30 minutes.
