Ingredients
- 8 slices bacon, chopped
- 16 ounces processed cheese, such as Velveeta, cut into 1-inch pieces
- 1/2 cup whole milk
- 1 tablespoon finely chopped fresh cilantro
- 2 scallions, finely chopped
- 1 plum tomato, quartered, seeded and finely chopped
- 1/2 small jalapeno, stemmed, seeded and minced
- Tortilla chips, for serving
Instructions
- Place the bacon in a medium skillet over medium heat and cook, stirring occasionally, until crisp, about 10 minutes. Transfer to a paper-towel-lined plate to drain.
- Place the processed cheese in a medium saucepot over medium-low heat, and cook, whisking, until melted, about 5 minutes (You can also melt the cheese in a microwave, stirring after 1-minute intervals.)
- Whisk in the milk a couple tablespoons at a time until incorporated. Stir in the cilantro, scallions, tomato and jalapeno.
- Transfer to a serving bowl, sprinkle with the bacon, and serve with tortilla chips.

Delicious but needs a little more heat. I would recommend using maybe 2 jalapenos. I used one and it was too bland. It is just beautiful to serve. Nice , bright colors.
