Bacon Dirty Rice

Ingredients

  1. 3 strips thick-cut bacon, chopped
  2. 1 1/2 cups long-grain white rice
  3. 1/2 teaspoon ground coriander
  4. 1 pinch ground cumin
  5. 1 cup chicken broth
  6. 2 tablespoons chopped fresh cilantro
  7. 2 tablespoons chopped fresh flat-leaf parsley
  8. Kosher salt and freshly ground black pepper

Instructions

  1. Cook the bacon in a medium saucepan over medium heat, stirring occasionally, until almost crisp, about 10 minutes. Add the rice, coriander and cumin and cook, stirring, until the rice is coated and light golden, 1 to 2 minutes. Add the chicken broth and 1 cup water. Increase the heat to medium-high and bring to a boil. Cover the saucepan with a tight-fitting lid and reduce the heat to low; cook for 16 minutes, then let stand, covered, for 5 minutes. Fluff the rice with a fork and stir in the cilantro, parsley and salt and pepper to taste.

Obsessed. This is a perfect side dish. Not too over flavored and it’s so easy to make. I love the fact that even the bacon is cooked in the same pot. It came out perfect just as the recipe was written. I personally wouldn’t change a thing. I have a 1 1/2 and 4 year old boys and they went in for seconds.

This looks like a really good recipe, but 2 cups liquid to 1 1/2 cups rice doesn’t quite compute. The bacon is a really good idea, though. For 35 years I’ve done twice the amount of liquid to rice faithfully and even people who don’t really favor rice like my rice.

I had really high expectations and those fell short when I finished making the recipe. It was lacking in flavor…next time I will double the cumin and coriander, add some garlic and maybe a squeeze of lime or lemon at the very end.

I really love this recipe, but my family doesn’t eat pork at all! I tried it with turkey bacon but it just didn’t taste the way I thought it would! I then tried it with ground turkey and beef. It was absolutely amazing!
