Bacon and Tomato Quesadillas

It resembles a BLT in Mexican fashion. Depending on the flavor of the little diced tomatoes you use, you can decide whether you want it zesty or smoky. The traditional quesadilla is given a new twist with crispy bacon and fresh basil. A delicious party appetizer or quick snack.

Ingredients

  1. 8 (8 inch) flour tortillas
  2. 2 cups shredded Mexican blend cheese
  3. 1 (10 ounce) can RED GOLD® Petite Diced Tomatoes with Chipotle
  4. 8 slices bacon, cooked and crumbled
  5. ½ cup chopped fresh basil
  6. 2 tablespoons vegetable oil
  7. Sour cream

Instructions

  1. Layer on half of each tortilla: 1/4 cup cheese, 2 tablespoons diced tomatoes. 1 tablespoon bacon and 1 tablespoon basil. Fold each tortilla in half to form a half circle.
  2. Lightly coat a large nonstick skillet or griddle with oil. Cook each quesadilla, over medium-high heat for 1 1/2 minutes on each side until cheese is melted and tortilla is lightly browned.
  3. Cut the quesadilla into 4 wedges and serve with sour cream.

Delicious! I used Fire Roasted Rotel. I think next time we will try the spicier one. We also used Turkey Bacon just because I prefer it.

Had fun making these with the grandkids. I used two sun-dried tomato basil tortillas and cutout the top one in the shape of a jack-o’-lantern for the fall season. The grands loved the spiciness of the tomatoes and the bacon was the perfect compliment.

My sons love this and so do I! I cook the bacon first and then cook the quesadillas in the bacon grease. Obviously, this adds some calories, but it’s very tasty. I’m a slow cook and even I can make these quickly.
