Ingredients
- 2 ½ pounds red potatoes, quartered
- 1 cup mayonnaise
- 1 cup petite green peas
- 5 hard-boiled eggs, chopped
- 4 slices cooked bacon, chopped
- ¼ cup minced onion
- 2 tablespoons mustard
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
Instructions
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 10 minutes. Drain and set aside to cool.
- Mix potatoes, mayonnaise, peas, hard-boiled eggs, bacon, onion, mustard, salt, and black pepper together in a bowl. Refrigerate to allow flavors to blend and bacon to soften, about 1 hour.

This is super good and easy to make. Hard to not eat it immediately. Added peas and dill pickles.
This was loved by all. Made and rated just as written. Just a couple of tips. I found it easier to cut the potato into bite size pieces after they cooked and cooled. For those who mentioned they liked to sweeten it up try thinly slicing a few baby gherkin’s.
Really good! I left out the peas because my family isn’t fond of them, and used bacon crumbles from Costco. I used very mild beer mustard (not the bright spicy French’s) and added a little extra. Next time I would add an extra egg or two. The key is to mince the onion really really fine, practically onion dust. This was a really nice cross between potato and egg salad. Delish!

Made this today and my family loved it- and they have never eaten potato salad! Didn’t change a thing except for added a little seasoned salt.
Added more of everything so as to make a bigger batch. Used baby red & yellow potatoes cut in half, choped some fresh green onions and dijon musterd. Definitely will make it again.
I adjusted for just two. I eye-ball the creaminess of the dressing to what I’ve got and I don’t like my salads swimming in mayo. I did about 1/4 miracle whip, 1/4 sour cream, and the rest Hellman’s Light. I used 2 tablespoons of Grey Poupon Mild and Creamy. I added chopped red bell pepper, celery, and the bacon/eggs. Topped with parsley and dried chives. It has a light zip to it and it really really good!

This is almost exactly like mine. Except swap the peas for sliced olives.
2.2.19 This is pretty much the way I always make mayo-based potato salad with the exception of the peas. Yes, that was new, I liked it, and I also liked that little pop of color that they added I used the potatoes that I had on hand (Yukon Gold), peeled them, and did add a bit of chopped red bell pepper that was in the fridge. This is a solid recipe for basic potato salad with all of my requirements for homemade potato salad: mayo, mustard, bacon, hard boiled eggs, and now petite peas!
Yes I removed peas this time only variant, it was a great recipe, don’t let the others stray you from something great, Christmas dinner over 20 guests can’t be wrong they all loved it!!!

This recipe is yummy – perfectly basic and very easy. I omitted the peas and onion, instead adding a tbsp of sweet relish. It gets better with time in the fridge and reminded me of Mom’s!
This was a favourite with my guests. Sure to make it again.
