Baby Blintz Stacks

Our favorite fast food salad restaurant has a dish very similar to this one. This is also a dip we use for chicken nuggets. Dressing should be thinned with a little milk if it is too thick.

Ingredients

  1. 1 (24 ounce) carton cottage cheese
  2. 2 fresh peaches – peeled, pitted and chopped
  3. 3 tablespoons white sugar
  4. ½ teaspoon ground nutmeg
  5. ¼ teaspoon salt
  6. ¼ teaspoon almond extract
  7. ½ cup sour cream
  8. 2 tablespoons brown sugar
  9. 1 ½ cups all-purpose flour
  10. 1 tablespoon white sugar
  11. ½ teaspoon baking powder
  12. ½ teaspoon salt
  13. ½ teaspoon ground nutmeg
  14. 2 cups milk
  15. 2 eggs
  16. 2 tablespoons melted butter
  17. ½ teaspoon vanilla extract
  18. 2 fresh peaches, pitted and sliced

Instructions

  1. Stir together the cottage cheese, chopped peaches, 3 tablespoons white sugar, 1/4 teaspoon salt, and the almond extract in a bowl until evenly combined. Stir together the sour cream and brown sugar in a separate bowl. Refrigerate both fillings until ready to use.
  2. Whisk together the flour, 1 tablespoon of white sugar, the baking powder, 1/2 teaspoon salt, and the nutmeg in a bowl. Beat the eggs, milk, butter, and vanilla extract in a separate bowl until smooth. Stir in the flour mixture until no lumps remain.
  3. Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle to form silver dollar-sized blintzes. Cook until bubbles form and the edges are dry, about 2 minutes. Flip, and cook until browned on the other side. Repeat with remaining batter.
  4. To assemble, spread 1 tablespoon of peach filling on top of each blintz. Stack together 5 blintzes to make a serving portion, and spoon the sweetened sour cream overtop. Garnish with peach slices.

I had 2 crepes to fill and had cottage cheese and chopped peaches in the fridge. Used Jennifer’s recipe for the first filling and it was delicious. Would never have thought to add nutmeg! Looking forward to making the whole recipe soon.

Instead of 1 star, I gave this two because I had to use canned peaches (not in season where I live). I thought everything was fine with the blintzes and the topping. The filling tasted off to me…just a weird mixture of flavors.

Wow, these are so flavorful! Nutmeg is quite strong but makes these so good. It is not peach season but when I saved this recipe, I just couldnt wait to make them. So I used canned peaches instead and drained them. Make sure to put the nutmeg in the cottage cheese mixture because the description does not instruct you to do so. I almost missed it…it makes a huge difference in flavor. I got a little lazy with the stacking and just started eating them like regular pancakes lol. Very good, thanks for the post. By the way, this makes tons of filling.
