A warming beverage with a lot of kick, this Mexican coffee cocktail. Mexico has its own flavored coffee that is created with tequila and coffee liqueur, not wanting to be outdone by the Irish.

Ingredients
- ½ pound bacon
- ½ cup mayonnaise
- 2 tablespoons red wine vinegar
- ¼ cup finely chopped fresh basil
- 4 slices French bread, cut into 1/2 inch pieces
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 tablespoon canola oil
- 1 pound romaine lettuce – rinsed, dried, and torn into bite-size pieces
- 1 pint cherry tomatoes, quartered
Instructions
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside, reserving 2 tablespoons of the drippings.
- In a small bowl, whisk together the reserved bacon drippings, mayonnaise, vinegar and basil and let dressing stand, covered, at room temperature.
- In a large skillet over medium heat, toss the bread pieces with the salt and pepper. Drizzle with the oil, continue tossing and cook over medium-low heat until golden brown.
- In a large bowl mix together the romaine, tomatoes, bacon and croutons. Pour the dressing over the salad and toss well.

This was a good salad. Since I didn’t have red wine vinegar, I used apple cider vinegar. The red wine would have tasted better.
This recipe was good. It definitely is a meal on itself. I did notice the basil flavor however I think there is room for reducing the amount of mayo if you like. I had some home made croutons that I used for the recipe and really this was awesome. Will make it again as it is a good twist on a standard salad by using fresh basil. Have some extra crusty bread to clean the plate!
It was good. I found the croutons a little salty but still very good. I will reduce the salt next time.
I’ve made this twice and adjusted the recipe. Straight off this is a 3 star on base recipe. Mayo+bacon drippings can’t go wrong! But it’s a bit lackluster without additions. To the salad I add cucumber, onion, and shredded cheddar. (I have also added chicken!) To the dressing I add garlic powder, onion powder, paprika, fresh lemon juice, a Splenda packet, and everything bagel seasoning (which I use for all my salads). So, great recipe to start and build on.
Sooooo delicious! Only thing I changed was I fried my croutons in the drained bacon pan. I counted three times both my husband and I said how tastey it was between our mouthfuls. Had lots of dressing left, I imagine it will be good to bake some chicken in this week

Followed the recipe and it was Yummy, and there was none left at the potluck. I could have made half the dressing. We like lightly dressed salads. Will add avocados next time, ’cause i love them.

Very tasty! Loved the basil mayo dressing; it was easy to make, too. When I do this again, I will add a little honey to the dressing mixture, and for those who feel that a BLT is all about the “B”, I’d go ahead and cook up the whole pound of bacon for the salad, especially if you are making this your main meal. My husband likes onion on his, so I added just a few thinly-sliced green onions, and my girls had the idea that a handful of shredded sharp cheddar on top would be great. Awesome recipe!
Only added avocados. This was delicious for a warm spring day! The dressing has a wonderful basil flavor that doesn’t overwhelm the salad but start with 1/2 the dressing and add more to suit your taste. Delightful
MY FAVORITE SALAD, BUT I ALSO ADD 1/2 CUP SHREDDED CHEDDAR CHEESE TO BOOST THE PROTEIN. IT IS A WONDERFUL SALAD TO MAKE AND SHARE. WHO DOESN’T LIKE A B.L.T, AFTER ALL? I WILL BE MAKING THIS FOR THE NEXT MOTHER-DAUGHTER BANQUET AT THE CHURCH. LOVE IT. AND THE BEAUTY OF IT IS THAT YOU CAN ADD ANY THING YOU WANT . PERFECT SIMPLE SALAD.

Excellent. Sauce was very, very nice. Added avocado, red onion & Pecorino Romano. And used Texas Toast croutons. Cut mayo in half. Several of these alterations were offered by other reviewers. Delightful Labor Day salad with Chardonnay and US Open tennis.
Enjoyed this recipe. I halved, and it still made a lot. I had the last serving the next day, and it held up nicely!
Very good salad that was easy to make while preparing dinner. I only used about two thirds of the dressing and no one asked for more. Will definitely make again.
