Ingredients

  1. 4 slices multigrain bread
  2. 2 large avocados – peeled, pitted, and mashed
  3. 2 tablespoons diced red onion
  4. 2 tablespoons chopped fresh cilantro, or more to taste
  5. ¼ cup freshly grated Parmesan cheese, or to taste

Instructions

  1. Set an oven rack about 6 inches from the heat source and preheat the oven’s broiler.
  2. Place bread slices on a baking sheet under the preheated broiler until toasted, 1 to 2 minutes.
  3. Mix together mashed avocados, red onion, and cilantro in a bowl. Spread on toasted bread and sprinkle with Parmesan cheese.
  4. Return to broiler until cheese is melted, 2 to 3 minutes.
  5. You can use any grated white aged hard cheese, like Parmesan cheese, or Romano cheese for this recipe.

Simple and delicious! Next time I will broil it longer than directed to get a better brown on the cheese. Overall great recipe though and one I will make again.
