Ingredients
- 1/4 avocado
- 1 slice sprouted bread, toasted
- 1 hard-boiled egg, sliced
- Extra-virgin olive oil, for drizzling
- 1 teaspoon lemon juice
- 1 teaspoon chia seeds
- Sea salt and cracked black pepper

Instructions
- Smash the avocado and spread on the toasted bread. Top with the egg slices. Drizzle with olive oil and lemon juice and sprinkle with chia seeds, salt and pepper.

This is my favorite recipe for avocado toast. I have it for breakfast and I can’t handle things like onion and garlic too early! I fried an egg instead of HB and used lime juice instead of lemon. Easy and delicious!

This was ABSOLUTELY the best avocado toast I’ve ever had. I’m gluten free, so I had to swap out the bread for a corn tortilla. Also, I’m not a big egg fan, but I had some carnitas laying around, so I put that on there for some protein. Didn’t have any lemon juice or chia seeds, but I whipped up some fresh pico de gallo and threw that on there. Added the avocado. Turned out pretty awesome… kudos to Marcela – I really like her recipes!
Just made this sandwich this morning for breakfast. It took about 3 minutes to prepare and it was delicious!
I made this for a brunch with friends, it did not disappoint. Everyone loved the recipe. This made my body happy, and it is a great way to start the day.
Anytime quick meal and oh so healthy! The second time I made it, I added a little chopped onion (already had it ready to go) and even better. Your favorite spicy seasoned salt would also be a flavor burst.
This is certainly a fun twist on breakfast. The wife and I love it!
