Ingredients
- 2 avocados – peeled, pitted and diced
- 1 sweet onion, chopped
- 1 green bell pepper, chopped
- 1 large ripe tomato, chopped
- ¼ cup chopped fresh cilantro
- ½ lime, juiced
- salt and pepper to taste
Instructions
- Combine avocados, onion, bell pepper, tomato, cilantro, and lime juice in a large bowl. Gently toss until evenly coated. Season with salt and pepper.

This is basically chunky guacamole, but still good. Unless you use jumbo avocados I think the amount of onion and bell would still be too much and take away from the avocado, so just add what you like. I used red onion and an orange bell because Hubbs isn’t a fan of green. For us, extra cilantro always! I had leftover grilled corn so threw that in as well. Great salad, used the leftovers on breakfast tacos!
I love this salad! I double it. I add 4 ears of fresh corn, cut off the cob. A jalapeño if I have one, red pepper instead of green, a container of cherry tomatoes, and a little minced garlic. Heavy on the cilantro. Delicious.
Delicious, fresh salad. I love the blend of the avocado and tomato, with some zest from the onion.

Delicious as side with chips to chicken tomatillo enchiladas. I used jalapeños because that’s the pepper I use. Will continue with this in dinner rotations. Scrumptious!
I can get on board with any “no measurements required” recipe. For a salad for one, and using what I had, I used one avocado, half a red onion, a handful of cherry tomatoes, juice from half a lime, bit of yellow pepper, a good splash of olive oil, S&P, and I added some crumbled feta, because cheese. DELICIOUS.
yummy fresh and light. I did make a few changes, used a poblano instead of green pepper, added a small English Cucumber sliced, used about 10 cherry/grape tomatoes of different colors, love cilantro and used it fresh from my garden,used a whole avocado and 2 tbsp of lime juice.
This salad is so refreshing, I used cherry tomatoes and was even more delicious, I mad it for the fourth time now

Thanks so much for a great recipe. The only change I made was to use juice from a whole lime along with its zest. Don’t scrimp on the cilantro; it’s what makes the whole salad pop! Try it, you’ll like it!

I don’t know that I would call this a salad. When it was finished it seemed to be more of a condiment side dish, like a salsa, to be used with a grilled steak. Flavor was okay, not strong. It just wasn’t what I was looking for although I’ll save the recipe for the grilling season and it will be something to accompany the meat.
This recipe turned out to be the best side dish for our steak fajitas!! I added black beans and we used some of it for inside the fajitas.

This is a wonderful addition to our dinners. I usually serve this with a sandwich, last night we had this with a turkey club sandwich. The last time I made this is was great but it tasted a little bland for us (we love loads of flavour) so this time I used the whole lime for juice and fresh cilantro paste (picture attached) and two minced garlic cloves.
