Avocado Open-Faced Sandwich

Ingredients

  1. 1 cup whole-milk ricotta, drained
  2. 1 tablespoon capers, drained, rinsed and crushed
  3. 1 tablespoon extra-virgin olive oil (the good stuff)
  4. Zest of 1/2 lemon plus 1 tablespoon lemon juice
  5. Big pinch kosher salt
  6. Freshly ground black pepper
  7. 1 small shallot, sliced
  8. 2 tablespoons sea salt flakes
  9. Zest of 1 lemon
  10. 6 slices sourdough bread, toasted
  11. 1 avocado, sliced
  12. 2 to 3 heirloom tomatoes, sliced
  13. 2 tablespoons salted sunflower seeds

Instructions

  1. For the ricotta mixture: Add the ricotta, capers, olive oil, lemon zest and juice, salt and some pepper to a bowl. Set aside and allow the flavors to meld.
  2. For the layers: Add the shallots to a bowl, cover with ice water and soak for 10 minutes prior to using.
  3. Add the sea salt and lemon zest to a bowl and combine with your fingers.
  4. To build: Top each slice of bread with some of the ricotta mixture, 2 slices avocado, 3 slices tomato and some shallots, sunflower seeds and lemon salt to finish. Cut diagonally.

Another winner for Valerie! My daughter and I LOVE avocados and this just enhanced the flavor. I made the recipe exactly as listed except for the tomato type she used. Couldn’t find it locally so I used beefsteaks instead. DELICIOUS!

Just saw Valerie make this for brunch! I’m taking it to my Tri & Run Team parties!  Got a feeling I’ll be bringing a lot more of V’s recipes in the future! The mix of capers, avocado, ricotta, and tomatoes screams healthy is delicious! The Lemon Salt is off the hook! FYI, I’m using a sprouted grain bread.  You rocked it, V!
