Ingredients

  1. 3 eggs
  2. ¾ cup feta cheese
  3. ½ avocado, diced
  4. ½ cup diced tomatoes
  5. ¼ cup chopped Kalamata olives
  6. 1 tablespoon chopped fresh basil

Instructions

  1. Whisk eggs in a small bowl until smooth.
  2. Preheat a nonstick skillet over medium heat. Pour in eggs. Scatter feta cheese, avocado, tomatoes, olives, and basil over 1 side. Cook until bottom is golden brown, about 5 minutes. Fold over; cook until center is set, about 3 minutes more.
  3. If using dried basil, whisk into eggs.

I recommend omitting the basil, or, if you must, just use fresh rather than dried. I used dried basil, and I thought it overpowered the more subtle flavors of avocado and feta cheese. Those two flavors do very well on their own with this dish, in my opinion. Also, the basil flavoring does not complement the other flavors as well. I liked the flavoring added by the tomatoes. I used fresh rather than canned, and recommend fresh tomatoes chopped. Otherwise, it’s a good recipe.

Very good and easy. It was a little full, so I’ll try to cut the filling pieces smaller next time. I used dried Basil and stirred it into the eggs, I loved the taste. Might be my new favorite omelette!

No changes on the first try. Will definately make it again and add other veggies like mushrooms, red onion and asparagus.

I did not have feta cheese so I used sharp cheddar which is all I had…I do not doubt it changed the flavor however it was still delicious.. I also think heating the veggies before putting on the omelet would make it even better… I will definitely make it again only next time with the feta cheese…yummy breakfast a most important meal to me….

I made 2 changes–instead of using canned roasted tomatoes with garlic, which I didn’t have on hand, I chopped some garlic, cooked it in the microwave and then added all the other ingredients for the filling–and warmed them in the microwave before putting them on the egg mixture.

Well this is a 3 egg omelet like you’ve never had before. YUM! The only thing I would change is to cut back on the tomatoes. A tzatziki sauce over the top would seal the deal..just sayin
