Ingredients
- ½ cup water
- ¼ cup red quinoa
- 1 ½ teaspoons olive oil
- 2 eggs
- 1 pinch salt and ground black pepper to taste
- ¼ teaspoon seasoned salt
- ¼ teaspoon ground black pepper
- 1 avocado, diced
- 2 tablespoons crumbled feta cheese
Instructions
- Stir water and quinoa together in a rice cooker; cook until quinoa is tender, about 15 minutes.
- Heat olive oil in a skillet over medium heat and cook eggs to desired doneness; season with seasoned salt and pepper.
- Combine quinoa and eggs in a bowl; top with avocado and feta cheese.

I thought this recipe was good but a little bland. So I added habanero shredded cheese and I did change up the eggs to egg whites! I turned out super good! Easy breakfast and healthy too! Thank you for sharing this recipe.
Loved the inspiration for this recipe. It reminded me of a taco bowl, so I switched up the cheese to Oxacan, added a dollop of sour cream and salsa verde – Truth be told I had left over brisket, diced a 1/2 cup and my husband and I devoured this bowl. Thank you for the recipe.
I add raw baby spinach to the bottom of the bowl and top with quinoa. Spinach tenders with the heat of the quinoa. I do add the tomatoes as shown in the picture; I use goat cheese but that is just a taste preference. Spice with cayenne pepper and hot sauce to kick start your day’s metabolism.
Have been mixing this recipe for years. Since we are a quinoa free household, we usually use black beans, green peas, or partially made chickpea hummus–the chunkier the better), goat cheese or grated parmesan or manchego. Add the avocado, mix in some bacon and parsley and grilled cherry tomatoes and Robert’s your father’s brother. ; ) Our version 4 stars. We rarely deviate from the recipe submitted, but in this case since we have been making variations of this for so long, we didn’t feel the need. Make your own recipe with this as a base.
I’m only giving this 3 stars because I really don’t like feta cheese and a lot of people have said it is bland. Goat cheese is better than feta, mild and creamy. Other than feta, this recipe definitely doesn’t have any spice I’d also substitute another grain for the quinoa. I doubt I even have any, but this would be good with a wild rice pilaf or rice mix. Add some black beans, onions, taco seasoning and salsa and I think it would be a meal. My wife doesn’t like runny eggs so I’d have to make hers with a hardboiled egg or poach it until the yolk congeals. Needs a bigger bowl too. I can see slopping parts over the side trying to mix everything together. Maybe serve it with some tortilla chips.
I’ve been making this for about a year now. I love it. Four stars bc of the amount of subs I make. I add turmeric to the quinoa, I hard boil the eggs (I add one and half eggs to each bowl) and I skip the avocado. I also add fresh berries or spinach if I have it on hand. The texture difference with the hb egg and avocado didn’t do it for me, but I wanted to be able to make four bowls ahead of time.

This is a terrific morning recipe! I say this as someone who does not cook in the morning. But I wanted to try this. As had another reviewer, I used a hard-boiled egg that I already had in the fridge, so one step eliminated. Otherwise, I followed the recipe as written. This was fast, easy & delicious, definitely a keeper.
I really liked this alternative breakfast bowl! I struggle with a sensitivity to eggs but with the Avocado, and quinoa it was all just delicious!! Totally would make this again!!

This was easy to make and it tasted great. I fried the eggs. For even an easier to prepare meal, I’ll use some hard boiled eggs next time.
This was a very filling breakfast bowl. After reading the other reviews about the flavor I added other ingredients. I added spinach, olives and salsa. I loved it and will make it again.
Nice change from bacon and egg breakfast. I would try a poached egg next time as I would have enjoyed egg yolk “gravy”. Good recipe to make your own. I flavoured the Quinoa with some finely chopped veg and it really added a level of flavour. Give it a try.

I made this today and my family enjoyed it very much. It was a welcomed healthy alternative to a typical Sunday morning bacon and eggs breakfast. I’ll try it again, but will need to infuse it with more flavor. I hit it with some lime juice, olive oil, S&P and diced tomatoes but it still was missing something. Maybe red onions and jalapeños might jazz it up. Still a guilt-free excellent basic meal.
Love it….I’m a sucker for anything with quinoa and avocado, and so much healthier than fried potatoes. Thanks for the great recipe and a great new breakfast.
