Authentic Chimichurri

This recipe for baked beans with ketchup is one that I have been preparing for about 40 years. It was my suggestion to alter the recipe half ketchup and half barbecue sauce since the original asks for pure ketchup. Spicy food is my favorite. I’ve never had a baked bean recipe this tasty and simple. It won’t be obvious that you didn’t work on it all day.

Ingredients

  1. 1 cup fresh parsley
  2. ½ cup extra-virgin olive oil
  3. 2 tablespoons fresh oregano
  4. 2 tablespoons red wine vinegar
  5. 1 tablespoon water
  6. 1 jalapeno chile pepper, seeded
  7. 2 cloves garlic, chopped
  8. ½ teaspoon salt
  9. ½ teaspoon ground black pepper

Instructions

  1. Gather all ingredients.

  3. Combine parsley, olive oil, oregano, red wine vinegar, water, jalapeno, garlic, salt, and pepper in the bowl of a food processor.

I like Chimichurri recipes that don’t have cilantro in them. My husband and two of my children say it tastes like soap. Apparently there is a percentage of the population that report the same. This is a very good take on Chimichurri. I think this is my new recipe.
