Aunt Barbara’s Strawberry Pie

  5.0 – 2 reviews  • Strawberry Pie Recipes

Delicious bacon-topped and balsamic-glazed Brussels sprouts. With heaps of bacon, our family adores these. This is a terrific quick side dish for a special meal, though we do enjoy them served lighter. Also ideal for gatherings throughout the holidays.

Prep Time: 20 mins

Additional Time: 2 hrs
Total Time: 2 hrs 35 mins
Servings: 8
Yield: 1 pie

Ingredients

  1. 1 cup graham cracker crumbs
  2. ¼ cup white sugar
  3. ¼ cup butter, melted
  4. 1 tablespoon unflavored gelatin
  5. ¼ cup cold water
  6. 1 cup heavy whipping cream
  7. ½ cup chopped strawberries
  8. ⅓ cup white sugar

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a mixing bowl; mix until evenly moistened and press into the bottom and sides of a 9-inch pie pan.
  3. Bake in the preheated oven until the crust is lightly browned and smells toasted, about 12 minutes. Remove from the oven and cool.
  4. Soak gelatin in cold water for 3 minutes. Heat the water and gelatin in the top of a double boiler set over simmering water, stirring frequently, until gelatin is completely dissolved.
  5. Beat whipping cream in a chilled glass or metal bowl until soft peaks form.
  6. Stir strawberries and 1/3 cup sugar together in a bowl. Pour gelatin mixture over strawberries. Gently fold in whipped cream until incorporated. Pour filling into baked pie shell and chill in the refrigerator until set, at least 2 hours.
  7. Do not over-whip or add extra sugar to the cream; it gets gritty and the sugar with the strawberries is enough.

Boy, I hate people that say they loved or hated a recipe and changed it… but here I go. I knew I wanted to make something like this- I had a graham cracker crust, strawberries, and whipping cream and an impromptu cookout with the neighbors in 2 hours. This worked perfectly. I made the following modifications: I didn’t have unflavored gelatin, so I used strawberry flavored. I also really wanted more strawberry, so added an additional half cup. The filling was then pink, so I spread some plain white whipped topping on top, and topped with some sliced decorative strawberries and sugar. The neighbors were quite impressed and happy with it. 2 hours was enough to mostly solidify it, but more time would probably be better. I’ll definitely make it again- it was cool and refreshing for a cookout.
