Asparagus Quiche

Beef stir-fry that is quick and simple. On my busiest weeknights, I cook this.

Ingredients

  1. 1 pound fresh asparagus, trimmed and cut into 1/2 inch pieces
  2. 10 slices bacon
  3. 2 (8 inch) unbaked pie shells
  4. 1 egg white, lightly beaten
  5. 2 cups shredded Swiss cheese
  6. 4 large eggs
  7. 1 ½ cups half-and-half cream
  8. ¼ teaspoon ground nutmeg
  9. salt and pepper to taste

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Place asparagus in a steamer over 1 inch boiling water. Cover and cook until tender but still firm, 2 to 6 minutes. Drain and cool.
  3. Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble and set aside.
  4. Brush pie shells with beaten egg white. Sprinkle crumbled bacon and steamed asparagus into pie shells. Sprinkle Swiss cheese over bacon and asparagus.
  5. Beat eggs, half-and-half, nutmeg, salt, and pepper in a bowl until well combined. Pour egg mixture on top of cheese.
  6. Bake uncovered in the preheated oven until filling is set, 35 to 40 minutes. Let cool to room temperature before serving.

I used chopped broccoli & bacon ( snip it before frying with scissors) & made my own pie crust ( cheaper). Wonderful spring addition to breakfast or luncheon!

I’ve made it several times but this last I used cremini mushrooms instead of bacon. Fried up the mushrooms and asparagus together worked out perfect. Frying has is the best way to go.

Huge hit at our house! I always make 2 because my Littles like this, and my Big’s, hubby, and I like it with a lot more flavor, a lot of extra veggies, and extra meats! Just add an extra egg, cubed ham and/or sausage *I use the brown and serve after frying them with the bacon. I add in broccoli, onions, peppers, mushrooms, and cheddar cheese. There are never any left overs and its very filling!

I liked it and thought it was even better the next day. I used an extra egg because mine were not large sized. I swapped Swiss for provolone. I used a frozen puff pastry sheet instead of the pie crust shell. The asparagus was not overpowering, but I did use only the top half of very young asparagus.

I halved the recipe to make one. Subbed finely chopped sage pork sausage for bacon, and cheddar instead of bacon. It’s in the oven. I’ll change rating if I don’t like the way it tastes.

Use diced ham and beat the yolk of the 5th egg with the other 4 and 3/4 milk and 3/4 heavy cream – delicious. Great just baked, leftovers OK for breakfast with cherry toms from the garden.

I happened to have Nueske’s Applewood Smoked bacon already cooked and in freezer and leftover asparagus. I also cut recipe in half sort of-used three eggs and before beating eggs dipped pastry brush in whites to prep crust.

Delicious! Even my son who says “real men don’t eat quiche” loved it. The only problem is that it’s time-consuming. Next time I will prep the cheese, bacon, & asparagus the day before so it doesn’t take so long
