Asparagus and Red Pepper with Balsamic Vinegar

Even those who detest vegetables will like the colorful and tasty vegetable dish made with asparagus and peppers. It complements roasted meats quite well.

Ingredients

  1. 1 tablespoon butter
  2. 1 tablespoon olive oil
  3. ½ bunch fresh asparagus, trimmed
  4. 1 red onion, sliced
  5. 1 red bell pepper, sliced
  6. salt to taste
  7. 1 tablespoon balsamic vinegar
  8. ¼ cup Parmesan cheese
  9. 1 tablespoon sesame seeds (Optional)
  10. 1 tablespoon toasted pine nuts (Optional)

Instructions

  1. Melt butter with olive oil in a large skillet over medium heat; add asparagus and red onion to mixture, season with salt, and cook until onion begins to soften, about 5 minutes. Stir red bell pepper into mixture and continue cooking until onions begin to caramelize, another 5 minutes. Remove from heat and add vinegar, Parmesan cheese, sesame seeds, and pine nuts; toss to combine.
  2. For milder flavors, substitute mozzarella cheese and use less vinegar.

I followed the recipe exactly as written but I omitted the sesame seeds and pine nuts. I used a very good quality balsamic. This recipe is easy, pretty and delicious, very flavorful. Definitely a keeper and a good company recipe too!

Simple and delicious. I added a package of prepared quinoa (to add a few carbs) after balsamic vinegar and before the Parmesan and left in skillet an additional minute. No pine nuts or sesame seeds.

Delicious! Be careful not to over cook the asparagus! Check it regularly for tenderness. I also opted to do a light sprinkling of Parmesan over the finished product, rather than dumping a quarter cup onto it.

Really great! Asparagus, red onion, red pepper and pine nuts are a great combination! However, I found the butter a little unnecessary. To make it a little healthier I will probably half the butter or skip it all together. That way the marinade would just be olive oil and balsamic! 🙂

Delicious, colorful, and quick. I don’t like onions so I omitted them. I love using the new robusto style olive oil. And i never have pine nuts on hand, so I sub chopped walnuts. One chopping board and one pan, so easy to clean up. Enjoy!

I made this as a side dish for baked chicken tonight. It turned out excellent. I browned the pine nuts in butter prior to adding them to the mix and I used sweet peppers instead of a bell pepper.

Yum Yum Yummy!!! I used a whole bunch of asparagus, 6 small shallots instead of red onion, no pine nuts and no cheese. I kept everything else the same. I thought this was delicious! Even my husband liked it and it is almost impossible to get him to eat veggies! Thanks for sharing!

A great concept that I think got carried away with too many ingredients. Loved the combo of asparagus, red pepper & red onion but the parmesan wasn’t really needed and overpowered & almost completely hid the balsamic vinegar.
