Ingredients

  1. 2 teaspoons vegetable oil
  2. 1 pound ground beef
  3. 2-inch piece ginger, peeled and finely grated
  4. 2 scallions, chopped
  5. 2 cloves garlic, minced
  6. 2 tablespoons soy sauce
  7. 1 teaspoon red pepper flakes
  8. 1/4 cup hoisin sauce
  9. 1/4 cup chopped peanuts
  10. Salt and freshly ground black pepper

Instructions

  1. 1 head Boston lettuce, leaves separated, cleaned and dried In a skillet over medium-high heat, add the vegetable oil and saute beef until brown. Stir in ginger, scallions, garlic, soy sauce, red pepper flakes, and hoisin and cook for 1 minute. Remove from the heat and stir in the peanuts. Season with salt and pepper and serve warm wrapped in lettuce cups.

This recipe as-is, is amazing! However, I prefer to use ground chicken, as I’ve found it brings out more flavor. Other than that the recipe is a 10/10!!!

Made these a few times, don’t get heavy with soy or use low sodium kind. Fresh green leaf lettuce in season is ok to use too. Its a great tasting appetizer!

AMAZING! Fast, easy and DELICIOUS! Made as written (but scaled down for just me)! I’ve read some of the other reviews that discussed adding water chestnuts for texture- I’m sure that’s good, but one of the reasons I selected this recipe is because it didn’t have them in the ingredient list! I forgot to add the ginger and it was still delicious!  I served with carrots, cucumber, red cabbage, peanuts, sriracha.  You could sub the meat for tofu.  This is a keeper!
