Ingredients
- ⅓ cup soy sauce
- ⅓ cup brown sugar
- 2 tablespoons lime juice
- 2 tablespoons orange juice
- 1 tablespoon Thai-style sweet chili sauce
- 1 teaspoon chile-garlic sauce (such as Sriracha®)
- 3 cloves garlic, minced
- ¼ teaspoon curry powder
- 4 skinless, boneless chicken thighs
Instructions
- Place the soy sauce, brown sugar, lime juice, orange juice, sweet chili sauce, chili-garlic sauce, garlic, and curry powder in a large plastic zipper bag. Seal and knead the bag with your fingers to mix all the ingredients and dissolve the sugar. Place the chicken thighs into the marinade, squeeze out the air from the bag, zip the bag closed, and refrigerate for 4 hours or overnight.
- Preheat an outdoor grill for medium-low heat; lightly oil the grate.
- Remove the chicken from the bag, pour the excess marinade into a small saucepan, and bring to a full boil for about 1 minute to sterilize the marinade.
- Grill the chicken thighs until they are no longer pink in the middle and show grill marks, about 25 minutes, basting them generously with the sterilized marinade as they grill.

Made as written with an addition of lime zest and a bit of olive oil in the marinade. I used all chicken drumsticks, I liked the bit of heat/spice. It had good flavor and will be made again. It’s best to boil the leftover marinade for 5 minutes to be completely safe.
I’ve been making this for several years and have played a little bit with the marinade ingredients. I’ve used few tablespoons of orange marmalade when I had no orange juice. Added Korean chili sauce for a bit more zing. It’s always big hit in my home and is gone in no time. (This is a tasty preparation for chicken legs as well.) Just noticed the recipe mentions boiling the marinade for “about 1 minute” to sterilize and use as a sauce. Allrecipes (and every other site I looked at) recommends boiling meat marinades for at least FIVE minutes to kill dangerous bacteria before consuming as a sauce. Maybe this is overdoing it, but I’d err on the side of safe guts for all.

I lived in an apartment after a divorce when I found this recipe. Let’s just say I made A LOT of friends every time I grilled at the pool. I paired it with thin sliced zucchini and squash in a salt/pepper/garlic seasoning, also grilled. I was the hit of the BBQ with it. I had to buy extra so I could feed the neighbors. This recipe is AMAZING. OJ, lemon juice and paprika contributed greatly. But recipe is amazing as is as well. Well done!
I made this for supper last night. I tried to make as written but I was out of curry powder and my lime only gave me 1 tbsp of juice. It was very good! I marinated for 3 hrs and kept some marinade aside and thickened as others suggested. It was delicious fresh but today it was fantastic. The marinade had time to blend flavors. I added it to my chicken and vegetables when I reheated it for lunch. I just wish I had rice to go with it. I can’t wait to see how it tastes when I have proper amount of lime juice and curry powder. Thank you for the wonderful recipe. It’s a keeper!!
It was great definitely cook it again. Good the next day too. My husband was out in the dark with a lantern grilling the thighs but he said it was worth it.

This is a wonderful marinade for any chicken pieces. I made it for guests and everyone loved it! Served with baked beans, cole slaw and good bread.

We are very particular eaters in this household; and rarely find a recipe worth making twice. However; this recipe was a unanimous hit even with with my 17 year old son who had two servings. I followed the recipe using thin sliced breasts and adding a squirt of honey. I made a separate batch to baste with and cooked it down to thicken it. Top notch.
Everything about this recipe is fantastic. I have made it with chicken thighs, tonight I made the marinade for shrimp. Excellent. We all love it.
