Ingredients
- 2 cucumbers – halved lengthwise, seeded, and sliced
- 2 teaspoons salt
- ½ cup rice vinegar
- ¼ cup white sugar
- 2 tablespoons sesame oil
- 1 tablespoon minced garlic
- 1 tablespoon minced fresh ginger root
- 1 tablespoon sesame seeds
- 4 fresh red chile peppers, sliced
Instructions
- Place cucumber slices in a colander and sprinkle with salt; set aside to drain for 1 hour.
- Whisk vinegar and sugar together until sugar is dissolved. Add sesame oil, garlic, ginger, and sesame seeds; stir.
- Rinse salt off cucumber slices by running under cold water; place in a large bowl with sliced red chile peppers. Drizzle dressing over vegetables and toss to coat. Serve immediately.

Very good drsg. I didnt have fresh ginger & will have it on hand when making another batch. Left out the hot peppers & substituted a dash of hot paprika. Toasted the sesame seeds. Very nice & light drsg. I think this would make a good green salad drsg or poured over oriental noodles.

A tasty way to use cucumbers! I didn’t have the red chili peppers, so I used dried red chili flakes.
A great recipe BUT after salting the cucumber and letting it sit for an hour in a colander, I tried to rinse off the salt with cold water, as per the recipe instructions. I let the cold water run for 3 minutes and then patted (petted? :)) the cucumbers dry, but the cucumbers were still too salty. I went ahead and made the dressing and the rice vinegar DID cut the salt taste, but not by much. A very tasty recipe but next time I will not salt the cucumber at all.

Awesome recipe! I did not have red chile peppers in my local grocery stores so I went with sweet peppers – equally delicious! You do get a bit more dressing than necessary, so either add more veggies or lessen the dressing proportions.
this recipe is delicious!! perfect side salad for a heavy meal, it is refreshing with a bit of heat. I will definitely make this again!
We cut back on the vinegar, just a little, and also added two tomatoes. It was really good, and complemented the rest of our dishes nicely.
I don’t use as much sugar, just a tsp of confectioner sugar. Also, know that in a pinch red wine vinegar & mirin can replace the rice vinegar! I also add about 1/2 tsp of red pepper flakes, if the pepper doesn’t turn out to be real spicy.
Makes too much dressing and is great the next day. Will make again and soon.
I wouldn’t have thought to make an Asian dressing for cucumbers, and I LOVE it! I sliced the cukes super thin.
We enjoyed this salad, I have made it twice now and it seems to keep in the fridge just fine.
Substituted olive oil and used grated ginger and red pepper flakes as well as 1/8 c. of sugar/stevia blend.
This was a hit with everyone! I used chile sesame oil and reduced it to 1 tbsp, and reduced peppers down to 2 serranos. Also, per other reviews, used much more cucumber with the same amount of dressing. My husband liked it so much he said this is the only way he wants to eat the cucumbers from our garden from now on!
Fantastic twist on cucumber salad. I added some tomato and onion, but the dressing is the star here. I served it with grilled teryaki chicken and steamed rice for an easy summer dinner.
