Asian Coconut Rice

My grandmother taught me how to make this straightforward cabbage dish with sour cream.

Ingredients

  1. 1 (14 ounce) can coconut milk
  2. 1 ¼ cups water
  3. 1 teaspoon sugar
  4. 1 pinch salt
  5. 1 ½ cups uncooked jasmine rice

Instructions

  1. Combine coconut milk, water, sugar, and salt in a medium saucepan; stir until sugar is dissolved. Stir in rice.
  2. Bring to a boil over medium heat. Cover, reduce heat, and simmer until rice is tender and liquid is absorbed, 18 to 20 minutes.

I was super skeptical at the cooking instructions; add rice to the cold water/coconut milk?? But! Followed! This totally worked! This was amazing! It was a bit sweet – even using unsweetened coconut milk – but if served with a spicy main dish, would compliment beautifully!! Garnished with fresh, chopped cilantro. Will keep and make again! I cook a lot of rice, but this did not work out for me. The rice took forever to cook and was mushy. Next time I will cook the rice as I normally do, then cook the coconut milk, sugar and salt separately and then incorporate.
