This dish for fattoush is a vibrant salad with a lemony garlic dressing. One of the most popular Middle Eastern salads, fattoush is a staple on the mezza (small dishes) table. This is a fantastic and healthful place to start if you’ve never cooked a single Arabic dish.

Ingredients

  1. 1 tablespoon vegetable oil, for frying
  2. 2 small (4 inch) pita breads, torn into pieces
  3. 1 large English cucumber, finely diced
  4. 3 cups halved grape tomatoes
  5. ¾ cup chopped Italian parsley
  6. ¾ cup chopped fresh mint
  7. ½ red onion, finely diced
  8. 2 tablespoons extra-virgin olive oil, or to taste
  9. 1 tablespoon fresh lemon juice, or to taste
  10. 1 teaspoon ground sumac, or to taste
  11. 1 clove garlic, crushed, or more to taste
  12. kosher salt and freshly ground black pepper to taste
  13. 1 ounce sheep’s milk feta cheese

Instructions

  1. Heat oil in a large skillet over medium-high heat. Working in batches, fry pita pieces in hot oil until golden brown on both sides. Blot dry with paper towels and set aside.
  2. Combine cucumber, tomatoes, parsley, mint, red onion, olive oil, lemon juice, sumac, garlic, kosher salt, and ground black pepper in a large serving bowl. Gently toss salad with fried pita pieces. Grate feta cheese on top using a small cheese grater to serve.

It is more like a greek Salad. Please don’t call it Arabic Fattoush. Fattoush salad does not have Feta cheese in it. It does not have Any cheese.

I’m usually pretty skeptical on Arabic food, but I decided to try this and I was not disappointed! I went without any mint as recommended by others, and thought the red onion would definitely overpower. But all the elements came together to balance everything and the pita actually brought in a nice chewy texture that I loved!

Great flavor, light dressing. I used cut up naan bread instead of frying pita bread and it absorbed some of the moisture and worked well in the salad. I will be making again.

Followed the recipe exactly and we loved it. It was very colorful. I wished the pita was a bit crunchier. I think we are going to try cutting them a bit next time.

It was really delicious. I’ve never eaten a salad that didn’t need any ranch. And btw make sure you dice the onions well or otherwise the chunks can be overwhelming.

I’ve always loved fattoush, but something just didn’t do it for me with this recipe. I kept trying to add more of this or a bit of that, but it just never came together for me and I’m just not sure why.

This salad is amazing! I follow the recipe as written except I don’t have sumac. My daughter works in a Lebanese restaurant and she said they brush olive oil on the pitas and toast in the oven. Works great and easier than frying! I add a little lettuce to the salad just so it makes more. So good!

This is a superb dish! To my astonishment and delight, my unadventurous-eater husband goes wild for this salad. It’s light and refreshing and complexly flavored. The only reason I don’t make it weekly is to avoid losing the excitement it sparks on our palates. I make two minor changes in the recipe as written: 1) I use purchased pita chips instead of frying my own; and 2) I use slightly more parsley than mint, rather than the 50/50 ratio specified.

I loved it, I didn’t have surmac so I substituted lemon zest … the dressing was just what I was looking for … I also did not have mint .. and it was great without it. I added grilled chicken breast and it was a nice, light, dinner !

I made this without the mint and pita chips and used curly parsley instead of Italian. Whenever I have had this in restaurants it also has curly parsley not Italian.
