Ingredients
- 2 1/2 pounds apricots, peeled, pitted and sliced 1/2-inch thick
- 1 pound cherries, pitted
- 3/4 cups sugar
- 1/4 cup flour
- 2 tablespoons butter
- 1 cup oatmeal
- 3/4 cup flour
- 3/4 cup brown sugar
- 1/2 cup butter, melted
- 1 teaspoon cinnamon
- 1 teaspoon salt
Instructions
- Preheat the oven to 400 degrees. In a large bowl, mix together the apricots, cherries, sugar and flour. Grease an 8 by 8-inch or 1 1/2 quart baking dish with the butter. Pour the fruit mixture into the dish. In a separate bowl, mix together the oatmeal, flour, brown sugar, butter, cinnamon and salt and mix well. Top the fruit with this mixture and place in the oven. Bake for 25 minutes, or until the topping is golden brown. Remove from the oven and cool for 15 minutes before serving.

We used perfectly ripe, local Blenheim apricots and bing cherries, so reduced the sugar and didn’t miss it. Oatmeal topping is so yummy. We also reduced sugar in that as well.
I used strawberries, blueberries and cherries and decreased the sugar to 1/2 cup. Turned out great. Will be a great base recipe for any kind of fruit crisp.
Good recipe but you can increase its rating from a 4 to 5 star by adding a cup of coursely chopped walnuts to the crumble – just as Ina Garten does in her Plum Crisp. I made with apricots and blackberries and it was delicious. Next time I will add more flour so the filling isn’t so watery.
I’m not a huge fan of cherries, but had both fruits and decided to try this recipe. It was very tasty! Instead of baking it in the oven, I put the dish on a cookie sheet and baked in on a gas grill. Worked great at 350 for about the same time.
I made this with farm-fresh cherries and super ripe apricots – wow!!! It was a hit and was absolutely delicious. I am a huge fan of the oatmeal/cinnamon topping, so next time I may double the topping for a little extra ‘crisp’ but that is just my personal taste. Bottom line: 5 stars!
This crisp was delicious… I couldn’t stop eating it! I reduced the sugar in the fruit to 1/2 cup and I could have reduced it a little more. I also added 1/2 teaspoon of almond extract to add flavor. The topping was just right. I’ll be making this again.
