My favorite morning muffins are these applesauce muffins. My mother passed down this recipe to me, and I made a few adjustments to add bran and flax. To add a hint of sweetness, add some raisins.

Ingredients
- ½ cup brown sugar
- ½ cup applesauce
- ¼ cup canola oil
- 1 large egg
- 1 teaspoon vanilla extract
- ¾ teaspoon salt
- 1 cup whole wheat flour
- 1 cup natural wheat bran
- 3 tablespoons ground flax
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 cup milk
Instructions
- Preheat the oven to 400 degrees F (200 degrees C). Grease a 12-cup muffin tin.
- Mix together brown sugar, applesauce, canola oil, egg, vanilla extract, and salt in a large bowl.
- Mix flour, bran, flax, baking soda, and baking powder in a separate bowl. Add bran mixture to applesauce mixture. Add milk and stir until thoroughly combined. Pour batter into the prepared muffin cups.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 11 to 13 minutes.
- I use single-serve 4-ounce applesauce cups for convenience, so I always have some on hand.

They tasted great. I think a little cinnamon would have been good. My only issue is that at 11 minutes, the middles were raw and the edges looked really brown. I had to turn the oven down to 350 and bake for an additional 8 minutes.
Amazing! The muffins had a beautiful crumb but held together. Wonderful deep flavor. I added 1 Tbsp molasses for a deeper color. These will be my go-to muffins!

This recipe balances fiber and sweetness to create the texture that works in our family. I appreciate the whole wheat flour, bran, and flax meal and changed nothing other than using 1 1/4 cups FiberOne cereal (pellet like) softened in the cup of milk before adding at the end of the process with walnuts and raisins. I also suggest, as have others, that you mix only as much as is absolutely necessary.
I really enjoy these muffins and have one every day for breakfast. I use 2 eggs for texture. For flavorings I add 1 tsp cinnamon, 1/2 tsp pumpkin pie spice and a little ground ginger – 1/2 tsp or so. I like to use whatever dried fruits I have (often it’s cranberries and dates) and I always throw in a handful of walnuts, because I love the crunch. They are off the yum-score chart!
These muffins are just want I was looking for ..moist and delicious. I substituted 1/3 c turbinado sugar and 2Tbsp maple syrup for the brown sugar (soaking the turninado sugar mix in the milk while I was preparing rest of ingredients). Also I used light olive oil in place of canola oil and added ~2/3 c of carrots, minced in food processor. YUM.
These are fabulous! Moist, sweet and hearty – all in one! Easy to make, turned out great.
These turned out great for me! Light and fluffy and soft! I didn’t have whole wheat flour, but regular flour worked just fine. I added raisins, but I minced them up with a sharp knife so you get nice little bits of raisin throughout. If you’re new to making muffins like I am, I had to go searching for some additional instructions: you fill the muffin cups about 2/3 full, and you let them cool for just a few minutes in the pan but transfer them to wire racks to finish cooling. Wonderful recipe!

This recipe turned out great! I made one change by adding half of a finely chopped apple to the batter.
Very good muffin! I’m a nutritionist so I liked the lower fat option. Added 1/2 banana, 1 tsp cinnamon and cardamom (because why not?) and put some bran cereal in the food processor instead of regular bran. Will definitely make these again! Karen Tait, D.T.

I had to swap applesauce for the cranberry-apple butter that I had on hand and I used almond flour instead of flax but these were delicious. The half recipe helped me keep them fresh and not overeat on them! I am excited to make these again!
I made it. I loved them! I added cinnamon, oats, raisins and walnuts. I used 1 cup applesauce and 1 tablespoon oil. Excellent!! Very healthy and tasty!!
I was spending money at the coffee shop for a raisin bran muffin a few times a week. Now I have discovered this recipe I will be bringing these to work every day! I followed the recipe and added a large handful of raisins. I will be making these muffins weekly from now on!
