Ingredients

  1. 2 cups all-purpose flour
  2. 1 teaspoon baking powder
  3. ½ teaspoon baking soda
  4. ½ teaspoon salt
  5. ½ cup chopped walnuts
  6. 1 cup white sugar
  7. ½ cup butter, softened
  8. 2 large eggs
  9. 1 teaspoon vanilla extract
  10. 1 cup apples – peeled, cored, and shredded

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×5-inch loaf pan.
  2. Mix flour, baking powder, baking soda, and salt together in a medium bowl. Stir in walnuts.
  3. In a large bowl, beat sugar, butter, and one egg until smooth. Beat in remaining egg, then vanilla. Stir in shredded apples, then stir in flour mixture just until moistened. Spread into the prepared pan.
  4. Bake in the preheated oven until a toothpick inserted in the center comes out clean, 50 to 60 minutes. Let stand for 10 minutes, then remove from the pan and finish cooling on a wire rack.

I gave this recipe 4 stars because I had to tweak it a bit. I’ve been baking for over 30 years so I can tell when things are missing !Make sure all of your ingredients are room temperature. I added the following: 1 teaspn cinnamon, 1/4 teaspn nutmeg, 1 tbspn lemon juice, 1/4 cup sour cream and I used 1/2 cup packed, Truvia reduced sugar brown sugar. I also used 1 1/2 cups of apples instead of 1. I always make my loafs like I’m gonna to describe. First stir all of your dry ingredients together in a bowl (save out 1 tbspn of brown sugar). Then put all of your wet ingredients in a larger bowl (minus the lemon juice). Add 1 tbspn of the brown sugar and 1 tbspn of lemon juice to your shredded apples and set aside. With a mixer, mix your wet ingredients until fluffy. Add in your apple mixture WITH the juices, then add in your flour mixture and mix with your mixture just until all blended together. By added the above ingredients and prepping your apples first, you will get a very moist and delicious loaf! The sour cream and the juice that forms in the apples will help a lot with moisture! I read the reviews before I made this, and a lot of people said it was dry. I used 2 cups apples, brown sugar instead of white, added cinnamon, and 1/2 cup milk. Turned out good!! Oh and also only cooked for 45 min on middle rack.

After reviewing others I made some changes by also adding 2 cups of apples with a 1/2 cup each of cinnamon, nutmeg and cloves other than that followed the rest and came out delicious

This bread came out perfect and so full of flavor. I added 1 tsp. cinnamon and 1/2 tsp. nutmeg. I shredded 3 apples in my food processor. The batter was thick so I added about 1/4c of sour cream. It came out amazing! I will definitely make this again.

I used 3 cups of defrosted apples with the juice they made, for this recipe, 1 cup of walnuts and 1 tsp of cinnamon, plus a pinch of ground cloves.

I made this Apple Loaf and it was perfect. Following suggestions of previous reviewers I added 1 tsp cinnamon and 1/2 tsp ground cloves. Other changes: I used two large apples peeled and cut into small pieces and I used oil instead of butter (due to allergy). Will definitely add to my recipe collection.

I read the other reviews before I made this recipe. I decided to use four apples. I added half a teaspoon of nutmeg and one teaspoon of cinnamon and I substituted half a cup of oil for the half cup of butter. I also used brown sugar in place of the white sugar. The mixture seemed slightly dry at the end so I added a splash of milk as well. It turned out very good and I will be making it again. 🙂

Like others suggested, I doubled the apples and added cinnamon and cloves. I also substituted light olive oil for half the butter to lighten the saturated fat content. We all enjoyed it and I’ll make it again with the modifications.

I made it for the first time with suggested changes – oil instead of butter, 2 c shredded apple instead of 1 c, added 1tsp cinnamon and 1/2 tsp cloves. The cloves were a bit strong, next time I’ll cut back to 1/4 tsp. Loaf was moist and tasty, cooked in 60 mins. I’ll definitely make this one again.

Very good recipe. I use this recipe as a base for all of my loaves and just change the primary ingredient. I’ve used zucchini, pumpkin, carrot, bananas, pears, strawberries, and blueberries in place of the apples in the past and it always turns out great. You’ve just got to adjust the spices based on the new ingredient. I also tend to recommend doubling the amount of fruit when making this recipe. Another thing I sometimes do is to take chunks of apple or pear (when using those in the recipe) along with the shredded. It makes a nice texture change in the mouth feel of the loaf as you eat it, and gives you little pockets of sweetness in the loaf as well.

After reading the reviews, I modified the recipe by adding 2 tsp cinnamon and 1/4 tsp ground cloves. I used gala apples because they’re very juicy. The result was delicious.

Made this earlier today. I made a few adjustments though; replacing the butter w/applesauce, doubling the amount of apples,and adding a pinch of nutmeg and a tsp of cinnamon to the recipe. The family enjoyed it . Next time I might add raisins n nuts.For those who have tried this recipe but it stuck to your pan, try lightly flouring your pan after greasing it.. guaranteed your loaf will not stick!
