Apple Crunch Cake

My grandmother gave me this recipe. Her grandma had passed it on to her. Before cooking, you can prepare this ahead of time and freeze it for a few days. Enjoy!

Ingredients

  1. cooking spray
  2. 2 cups all-purpose flour
  3. 1 teaspoon baking soda
  4. 1 teaspoon ground cinnamon
  5. 1 teaspoon ground nutmeg
  6. 1 teaspoon salt
  7. 2 cups white sugar
  8. 1 ¼ cups vegetable oil
  9. 2 eggs
  10. 1 teaspoon vanilla extract
  11. 2 cups apples – peeled, cored, and chopped
  12. 1 cup chopped walnuts

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish lightly with cooking spray.
  2. Sift flour, baking soda, cinnamon, nutmeg, and salt into a large bowl. Whisk in sugar, oil, eggs, and vanilla extract. Fold in apples and walnuts. Spread batter in the prepared casserole dish.
  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 45 minutes.
  4. Substitute pecans for the walnuts if desired.

This is not a review of the actual recipe as I cut the sugar quantity by half. We are not fans of extreme sweetness so by doing so it was perfect. With that exception I could not have pulled this new wonderful desert together without you, Thanks.

I substituted mashed bananas for the oil and made this into a round layer cake with cream cheese icing. Delicious!!!

This one is hard to rate, because I made mistakes that may have changed the outcome. We loved it the way I made it and my husband says I need to keep making it with my mistakes left in. I didn’t have enough sugar so I added brown sugar for the 1/2 cup I was short, and I over loaded the cake with apples. My cake came out moister then most cakes with a candied like crust making it even crunchier. I am thinking if it is this good with mistakes then it is stellar made as written. A tasty, easy, forgiving recipe.
