Ingredients

  1. 1/4 cup cider vinegar
  2. 1 cup mayonnaise
  3. 1/3 cup poppy seeds
  4. 1/3 cup honey
  5. 2 teaspoons kosher salt
  6. 1 teaspoon freshly ground black pepper
  7. 1 medium cabbage, cored, finely shredded
  8. 2 large carrots, peeled, julienne
  9. 1 bunch scallions, thinly sliced
  10. 1/2 cup finely minced parsley leaves, optional
  11. 4 Fuji apples, peeled, cored, julienne

Instructions

  1. Prepare the Poppy Seed Dressing. In a medium bowl, combine all the ingredients together until well blended. Set aside.
  2. Prepare the salad. In a large bowl, combine the cabbage, carrots, scallions, parsley, and apples. Pour in the reserved dressing and toss until well blended. Refrigerate at least 1 hour before serving, mixing the salad at least once to evenly distribute the dressing.

It’s one of the best slaws I’ve ever eaten. I took the advice if one re odwer and added a couple of teaspoons of Everything Bagel spice to the dressing. Gave it such a great flavor! My new go-to recipe.

This will be my only coleslaw recipe! I didn’t have scallions so I used 1/2 a red onion. I also used 2 apples & 2 very ripe pears so I could use less honey in the dressing. Also for the dressing I used 2 generous tablespoons of “everything but the bagel” seasoning which has the salt, pepper, poppy, and sesame seeds.

I halved this recipe dinner is just my hubby and me. It was very good with a lovely aftertaste. I would reduce the poppy seeds as there are a LOT of them. But it’s very good. Definitely a do-again.
