Apple Cinnamon Oatmeal

as given by my 4-year-old. This Asian food can be eaten with rice, noodles, or my personal favorite, crunchy fried rice noodles. Add 1 teaspoon of a cornstarch-soy sauce mixture if the sauce is too thin. Serve with brown rice or pasta.

Ingredients

  1. 1 cup water
  2. ¼ cup apple juice
  3. 1 apple, cored and chopped
  4. ⅔ cup rolled oats
  5. 1 teaspoon ground cinnamon
  6. 1 cup milk

Instructions

  1. Combine the water, apple juice, and apples in a saucepan. Bring to a boil over high heat, and stir in the rolled oats and cinnamon. Return to a boil, then reduce heat to low, and simmer until thick, about 3 minutes. Spoon into serving bowls, and pour milk over the servings.

The recipe is truly simple and easy to make. However, we made a significant number of changes to make it to our taste. We reduced the water, apple, and ground cinnamon in half. We used “Instant Oats w/Cinnamon” from Quaker, and we added a tablespoon of sugar (Turbinated Raw Sugar). The directions are very simple so we made no changes to that. Good Breakfast!

LOVE this!! Didn’t have apple juice so I followed another reviewer’s suggestion and used applesauce. Cut up the apples the night before (and I doubled the amount – the apples were small & we like extra fruit), so it was a super quick easy breakfast to make my kids before school. No more instant oatmeal packs for us! So happy I found this recipe!!

While wondering if the oatmeal would cook in just 3 minutes, I was pleasantly surprised that it did. I did not add any milk to the finished recipe but thought it could use a couple of teaspoons of brown sugar sprinkled over the top to sweeten it a little. I will fix this recipe again. It’s a nice little treat from just plain oatmeal.

After reading some of the reviews, I decided to try this recipe for brunch with my mother. I substituted apple juice for the water, and then apple sauce for the actual juice in the recipe. I also added a pinch of nutmeg. Served with a pat of butter, and some brown sugar on the side. I thought it was “ok” – very flavorful, but really just not my thing. Apple flavored oatmeal was something new. My mother however, raved about it and loved the texture and flavors.

This was really good but I did read reviews and decided to personalize mine. In place of 1/3 of the water I used Vanilla Almond milk. I did the applesauce substitution for the apple juice also andI added 1/4 cup coconut sugar to sweeten since the applesauce was unsweetened, along with raisins. It was not soupy but thick and satisfying this way. Great to make ahead and warm up for a quick breakfast at my desk at work.

I just made this for breakfast and my daughter and I liked it. The only change I made was to add a teaspoon of vanilla extract while cooking the apples and 2 teaspoons of maple syrup after adding the oatmeal. I think the next time I make it, I will use all apple juice/cider instead of the water and omit the maple syrup as I think the maple syrup would make it too sweet with the apple juice/cider. I will definitely make this again!

I made this for one, and made a few changes: shredded half a honeycrisp apple with a box grater. I didn’t have apple juice, so I subbed unsweetened cranberry juice. I covered while simmering, so I had extra liquid–soaked that up with dried cranberries (around 2 TBSP), pea protein powder (about 1/2 TBSP), and chia seeds (1 tsp). SO tasty and fast! I don’t use any kind of milk, so I skipped that and never missed it.

I followed the recipe and it’s more like soup. I only added 1/4 cup of milk. I was planning to add one cup but seeing how it looked with 1/4 cup, I decided one cup would be horrible. The flavor isn’t great, I’d like more apple flavor. It’s very bland.

I gave 3 stars only after I “fixed” it, otherwise I would had given 0. After adding a grinding of pink salt and 1tsp of brown sugar, it was actually tasty.
