Any fish can be used in this recipe because it is so straightforward. Simply put, I really enjoy cod. The components are placed in a foil pouch, which is then steam-cooked in the oven. An absolutely simple dish.

Ingredients

  1. 1 teaspoon butter, or as needed
  2. 1 ½ cups graham cracker crumbs, or more as needed
  3. ⅓ cup butter, melted
  4. 2 (8 ounce) packages cream cheese, at room temperature
  5. ½ cup white sugar
  6. 2 large eggs
  7. 1 teaspoon vanilla extract
  8. 3 Granny Smith apples – peeled, cored, and diced
  9. 2 tablespoons white sugar
  10. ½ teaspoon ground cinnamon
  11. ¼ teaspoon ground nutmeg
  12. ¼ teaspoon ground allspice
  13. ½ cup brown sugar
  14. ½ cup all-purpose flour
  15. 1 tablespoon finely chopped walnuts, or to taste (Optional)
  16. ¼ teaspoon ground cinnamon
  17. ¼ cup butter, cut into small pieces

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly butter a 9×13-inch baking pan.
  2. Mix graham cracker crumbs and melted butter together in a bowl until crumbly, adding more crumbs if mixture is too wet. Press crust into the prepared baking pan.
  3. Bake in the preheated oven until golden and set, 7 to 8 minutes. Remove from the oven and set aside.
  4. Beat cream cheese and 1/2 cup sugar using an electric mixer in a large bowl until smooth. Add eggs, one at a time, beating after each addition. Beat in vanilla extract on low speed until mixture is blended. Pour filling over warm crust.
  5. Stir apples, 2 tablespoons sugar, cinnamon, nutmeg, and allspice together in a separate bowl; spoon evenly over filling.
  6. Mix brown sugar, flour, walnuts, and cinnamon for streusel together in a bowl. Mix or cut butter into walnut mixture using your fingers or a knife until crumbly. Sprinkle over apple layer.
  7. Bake in the preheated oven until cheese filling is set, 30 to 35 minutes.
  8. Remove from the oven and let cool completely, about 30 minutes. Cut into small squares and refrigerate until ready to serve.
  9. You can substitute margarine for butter, if desired.

These bars are a family favorite. Love them!

7.25.19 Scaled this down to 12 servings, and it baked to perfection in 35 minutes. The cheesecake filling is super creamy, but the real star is the pleasantly sweet apple streusel topping with its fresh, pure apple flavor. Wouldn’t change a thing, we thoroughly enjoyed this.
