Ingredients
- 9 ounces cake flour (about 3 cups)
- 1/2 cup all purpose flour
- 1/2 cup granulated sugar
- Pinch gray salt
- 1 cup (2 sticks) unsalted butter, chilled and cut into large pieces
- 1 tablespoon vanilla
- 2 tablespoon cold water
- 4 Granny Smith apples
- 1 cup (2 sticks) unsalted butter
- 1 tablespoon lemon juice
- 1 vanilla bean, or 1 teaspoon vanilla extract
- 1/3 cup granulated sugar
- 1 tablespoon water
- 4 Granny Smith apples
- 1/4 cup sugar
- 1/2 teaspoon vanilla
- 1/2 lemon, juiced
Instructions
- For the dough: In a mixing bowl with a paddle attachment, add the dry ingredients and mix for 5 seconds to blend. Add the butter and vanilla and mix until the butter is about the size of peas. Add the cold water and blend until the dough just comes together. Form the dough into a roughly shaped ball, wrap in plastic, and refrigerate for 1 to 2 hours.
- Applesauce filling: Peel, core, and slice the apples. Put the apples with the rest of the ingredients into a saucepan. Bring to a boil, turn down the heat, and cook until the apples are very soft, about 20 minutes. Remove from the heat, cool, and refrigerate.
- Diced apples: Peel, core, and cut the apples into large dice. Toss with the sugar, vanilla and lemon juice and set aside.
- Assemble the bomboloni: Remove the dough from the refrigerator. Roll out to 1/4-inch thick round. Cut into 6-inch rounds. Place about 1/4 cup of the Apple Sauce Filling onto the center of each round. Top with a few pieces of the Diced Apples. Pull the sides up towards the center to form a bundle, pinching the dough together towards top. Cover with plastic wrap and refrigerate for 1 hour before baking
- Bake the bombolonis: Heat the oven to 350 degrees F.
- Remove the bombolonis from the refrigerator and place them on a greased or parchment paper lined baking sheet. Bake until golden brown, about 25 to 30 minutes.

These have become a family favorite!! They are extremely rich, so i make them smaller. I also often use my cream cheese pie crust recipe, but do everything else the same. Easy to make and people are always impressed. Just the smell alone divine enough to make them; the vanilla bean really gives an added dimension to these!
For Anonymous, the 9 ounces of flour called for in this recipe is weight, not volume. For liquid ingredients, ounces would be volume; for dry ingredients, it’s weight.
I was so excited to try this recipe. But, as I was making the dough, I added the 2 tbsp water and it definitely wasn’t enough to bring the apx 3 C flour together as a dough. It was still incredibly dry. I looked at other pastry recipes and saw 1/2 C water per 2 C flour. If someone has made this, please let me know if the water measurement worked for you.
Also, I personally would appreciate it if people waited until they try a recipe to rate it.
9 ounces does not equal 3 cups. I wish someone would read these (or test them) before they are posted. For the record…9 ounces is NOT enough cake flour.
I did not use the dough portion. I used ready made and just made them about 4-5″ instead of 6″. They worked great. What a cool deal
Sometimes I have to make smaller size portions because I don’t have the will power to not eat the whole thing and then some.. Nice change from adding cinammon and nutmeg to apples.
I haven’t made this yet, but I plan to for a dinner next week. It sounds like a 4-star recipe at the very LEAST. I just wanted answer another posters question about topping:
1 stick butter
1/4 c. sugar
1 T. flour
mixed together in mixer and topped on bombolinis just before baking.
I love anything apple so I will make this recipe. The airing referred to a topping and the Gameplan referred to a topping. The recipe does not mention the topping recipe or when to apply it.
Although this was a multi-step recipe, it was still pretty easy to make. I got a little confused on the measurement for cake flour, 8oz. or 3 cups. Wich one is it? I used a little under 3 cups and it came out fine. I served it with a scoop of vanilla ice cream and they were a huge hit.
