Ingredients

  1. 9 tablespoons unsalted butter, cut into 1/2-inch cubes
  2. ¾ cup chopped pecans
  3. ¾ cup packed golden brown sugar
  4. 1 teaspoon ground cinnamon
  5. ¾ cup all-purpose flour
  6. 2 cups all-purpose flour
  7. 1 ½ teaspoons baking powder
  8. ½ teaspoon baking soda
  9. ½ teaspoon ground cinnamon
  10. ½ teaspoon salt
  11. 1 ½ cups white sugar
  12. ½ cup butter, melted
  13. 1 cup sour cream
  14. ½ cup milk
  15. 3 eggs, lightly beaten
  16. 2 teaspoons vanilla extract
  17. 2 medium Granny Smith apples, peeled, cored, and finely diced
  18. 8 slices Farmland® Classic Cut Bacon, cooked, roughly chopped

Instructions

  1. Brown Butter Streusel: Cook butter in medium saucepan over medium heat until melted. Once melted, stir often until butter begins to brown and smell nutty, about 5 minutes. Remove from heat and add in pecans, sugar, cinnamon, and flour. Cool and reserve.
  2. Cake: Heat oven to 350 degrees F. Grease a 9×13-inch baking pan.
  3. Whisk together flour, baking powder, baking soda, cinnamon, salt, and sugar in large bowl.
  4. Stir in melted butter, sour cream, milk, eggs, vanilla, and apples until smooth. Pour into prepared pan.
  5. Sprinkle bacon on top of batter, followed by streusel.
  6. Place pan in oven and bake for 30 to 45 minutes or until a toothpick inserted in the center comes out clean.

This is a pretty good cake, not too sweet and the salty bacon compliments the flavour well. It turned out a bit crumbly but the apples kept it fairly moist. I didn’t have quite enough sour cream so I had to add more milk, which might be why I had to bake it longer than the recipe called for. If I ever make it again I’ll probably use more apples and cut them into larger chunks. I also think it would have been better with more bacon, I could have used the whole package rather than only half. I’d add more pecans, too.
