Apple-and-Ham Salad

Ingredients

  1. 3 crisp apples (such as Cortland)
  2. Juice of 1 lemon
  3. 3 tablespoons extra-virgin olive oil
  4. 5 shallots, thinly sliced
  5. Kosher salt
  6. 2 tablespoons apple cider vinegar
  7. 2 tablespoons dijon mustard
  8. 1/4 cup sour cream
  9. 1/2 pound deli-sliced Black Forest ham, torn into pieces
  10. 2 bunches watercress, trimmed
  11. 4 endives, sliced crosswise
  12. Freshly ground pepper

Instructions

  1. Thinly slice the apples. Toss with the lemon juice in a large bowl.
  2. Make the dressing: Heat the olive oil in a skillet over medium heat. Add the shallots and 1/2 teaspoon salt and cook, stirring occasionally, until golden, about 8 minutes. Whisk in the vinegar and mustard; remove from the heat and let cool slightly. Whisk in the sour cream and 1/4 cup water.
  3. Add the dressing to the bowl with the apples. Add the ham, watercress and endives. Season with salt and pepper and toss to coat.

I really love this salad. I made for my co-workers and they ate it ham over fist Ha! I replaced the sour cream with greek yogurt, and the dijon with honeycup mustard. Gave it quite the kick!

I love this recipe. such a simple idea but I never thought of pairing leftover ham I had in the fridge with apples in a salad. crisp and fresh tasting. the homemade dressing was delicious and easy too.

I used organic apples, which you should ALWAYS use (especially in recipes that call for raw apples. Non-organic apples are one of the fruits highest in pesticides. This recipe was okay, a little bland – didn’t impress my family but it was okay.
