Appetizer Mussels

Although this is more of a cream cheese-filled maple-pumpkin bread than a genuine cake, it is nonetheless excellent. It complements a cup of coffee beautifully and isn’t excessively sweet. Additionally, it tends to taste better the next day because the spices seem to meld somewhat more with time.

Ingredients

  1. ¾ cup white wine
  2. ¾ cup tomato and clam juice cocktail
  3. 3 cloves garlic – peeled and sliced
  4. ½ teaspoon crushed red pepper flakes
  5. 1 pound mussels, cleaned and debearded
  6. 3 tablespoons butter

Instructions

  1. In a stock pot, combine the wine, juice cocktail, garlic and pepper flakes. Bring to a boil and add mussels.
  2. Cover and continue to boil for about 4 to 6 minutes or until all the mussels have opened. Discard any mussels that haven’t opened.
  3. Remove mussels from liquid and keep warm. Pour off liquid to leave about 1 cup. Try not to discard the garlic. Boil the 1 cup of liquid until it’s reduced to about 3/4 of a cup.
  4. Add butter and stir until butter has melted and sauce has thickened slightly. Serve mussels with sauce.

Yum! I saw this and it sounded similar to a dish I love at a local and pricey seafood restaurant. I was nervous about buying mussels from a grocery store as they not netted with a harvest tag as I was accustomed to. The meat manager at Safeway was amazing. He showed me the harvest tag (required to keep by law) and told me when the new batch was coming in. I went back on that date and he hand picked 1 dozen mussels, packed them in a plastic bag with holes and ice and told me what me what to do with them when I returned home. At dinner time we made this recipe as directed, adding fresh parsley and dill. Exceptional- even with the Clamato juice (I don’t care for tomato juice). Thank you so much! Would be great with clams too!

Outstanding !! This rocked my socks off, I can’t say enough about it ! Although I forgot the butter , I didn’t miss it ( I don’t think lol ) I reduced the sauce for 15 mins and then threw the mussels in, easy peasy ! I have always used the ole wine, garlic , etc. But never again . This is now my one and only for mussels , it’s that’s good !

I love mussels. I omitted the tomato and clam juice and added fresh tomatoes, a pinch of dill and a pinch of oldbay. A fresh lemon squeeze tops it off. Garnish with parsley. Xoxo

Perfect! i used regular tomato juice and frozen precooked mussels out of necessity, and it was fantastic! As such, this appetizer can be pulled out with no advanced planning as long as you have a can of tomato juice. Thank you!

I used spicy V8 and more garlic. Hubs thought they tasted muddy which had nothing to do with your recipe so I got them to myself! Mopped up yummy broth with crusty bread. Added some seasoning blend I use for olive oil to dip bread in that’s a bit spicy. Was divine!!!

My family loved it! I added 1 8oz diced tomatoes roasted garlic flavor to thicken up the sauce. It taste incredible. Serve with baguette or french bread.

Amazingly good and most importantly easy! I added tomato sauce to the wine and juice to thicken it a bit, after I sautéed the garlic with some butter and half a finely chopped white onion. Be sure to get some bread to eat with the sauce. I doubled the recipe because we are mussel lovers and this didn’t disappoint.

This was wonderful. I followed others and used diced canned tomatoes with chipotles instead of the tomato juice cause we like spicey had no clam juice do added a slug or two of Bloody Mary mix. It was so good. I coulda been heating in a five star restaurant. Make sure to have lots of crusty bread for the broth

I’m not a fan of mussels but my husband enjoys them and it’s really the one thing I don’t ever make. I decided I would surprise him so I tried this recipe. DELICIOUS! husband really liked them and I really can’t believe it but I did too! My daughter said, “Where have these been my whole life?” Will being making again for sure. Thanks for sharing!

I loved this recipe! I added extra garlic, two shallots and two Roma tomatoes chopped in big pieces. I wasn’t sure what the red sauce/ clam mixture was made of so I bought red clam sauce instead, flavor was perfect. This recipe was great and easy to do.

I’ve made this recipe multiple times now and it has never failed to please!! The only thing I do differently is I boil all the liquid for a bit before pouring it over the mussels. The Costco location close to my house sells pre-cleaned mussels which make this recipe very quick to make!
