I received this recipe from my aunt. The rolls are fantastic!

Ingredients

  1. 2 ½ cups warm milk
  2. 4 teaspoons active dry yeast
  3. ½ cup sugar
  4. 2 eggs
  5. ½ cup butter, softened
  6. 2 teaspoons salt
  7. 7 cups all-purpose flour, or as needed
  8. ½ cup butter, melted

Instructions

  1. Pour milk into a large mixing bowl, and sprinkle yeast over the surface. Allow to rest for 5 minutes. Beat in the sugar, eggs, 1/2 cup butter, and salt; blend thoroughly. Gradually stir in the flour to make a soft dough. Cover bowl, and set in a warm place until dough doubles in size, about 1 hour.
  2. Punch down the dough, cover the bowl, and allow to rise again. Repeat this step two more times.
  3. Break off 2 to 3 inch size pieces of dough, roll lightly into round shape, and place in prepared baking dish, edges touching. Repeat to make 36 dough balls. Cover and let rise until doubled in size.
  4. Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9×13 inch baking dish.
  5. Bake rolls in preheated oven until tops turn golden brown, 10 to 15 minutes. When rolls are finished baking, drizzle melted butter over the top, and serve warm.

I use this recipe to make homemade Pepperoni Rolls and/or stuffed rolls, as it’s the same recipe as my mom’s (I used to have her recipe and lost it but found this and it’s the exact same) They turn out amazing each and every time. I’ve also made these for holidays too and never had a single complaint. Sometimes I’ve needed a little extra flour but all of those times is when it was humid outside.

I’ve been making a smaller batch version of this recipe for Years. I use my bread machine to do the work and when its all done rising for the second time I take them out – shape them on a cookie sheet and let them rise again. In fact the recipe came from my grandma. We all call them buns LOL because that is what they called them back then. It is a must have for the holidays and they taste amazing. My mom used to make XL batch and freeze them. They still tasted as if they were just made.

I’ve tried several dinner rolls from AR and these are my favorite so far. Good flavor and texture. A couple of notes: I kneeded the dough for a while even though the recipe didn’t call for it. Not sure it helped, but kneeding is part of the fun. This recipe makes a lot of dough and takes every inch of an 11X13 pan.

I found this recipe to be great. I believe after the first mix the the dough needs to be kneaded to get the dough correct and started. In looking over the bad reviews , going to a no knead dough is incorrect for this recipe. I kneaded the dough on the first mix and then followed the recipe after that and got a perfect dinner roll.

I loved it. I use 2% milk, King Aurthur flour. I added a bit more flour and less sugar. Let them rise 3 times for an hour. Ive made 9 batches and they come out great every time!!

I’ve now made this recipe 3 times and these rolls are a hit each time. I brought about 9 to my mom’s and my sister ate all of them! I use extras as little buns for sandwiches in my kids lunches. they’re great reheated too

This is the 4th yeast dinner roll recipe I’ve tried. It is by far the best! Punching down the risen dough three times and then allowing it to rise one last time before baking, produces a very fine texture that is delicious. One must simply allow this recipe to take its 4 hr, 40 minute required time. Worth it!

Really great recipe. Everyone loved them. My recommendation would be only two rises (instead of three) before the final rise when they are rolled out. They rose well the first 3 times for me but not very well after they were rolled out into balls the 4th time.
